What youll be doing: This is a hands-on position on bakery goods product development and formulation, mainly in tortilla and flat breads. The position will involve working in our product development lab and pilot plant facility. Primary duties and responsibilities include: Work with senior product development manager, develop formulation blends, evaluate new ingredients, perform shelf-life test of bakery goods along with chemical, physical and sensory analysis as per required by the product protocols Perform lab scale, pilot/production scale trials to make bakery mix or baked goods prototypes in the test kitchen, pilot plant or other facilities Work closely with technical service and sales team to modify bakery pre-mix and optimize its performance in baked goods Maintain the integrity of R&D laboratory/pilot lab environment, good sanitary practices and maintenance of pilot plant equipment. Identification and evaluation of new molecules in market segments that are of commercial interest Mechanistic studies on the functions of food ingredients. Application studies for applying ingredients in various food products What we require of you: BS/MS degree in Food Science/Engineering, or related areas with min of 3 years hands-on experience in bakery goods/bakery mix product development, will consider an Associates Degree with proven extensive hands-on experience Experience of independent formulation development and modification of bakery goods formula is a must Hands-on experience with bakery pilot scale or production scale facilities is a plus Experience in formulation and manufacturing of tortilla and flat breads is a plus Physical requirement - Able to lift 50 lbs. weight on regular basis. The work place might have noise from equipment. Depending on the project, might require stand-up position for min of two hours/day Understanding of lab procedures and safety Multi-tasking and attention to details Good communication skills. Able to present work to people with both science and non-science background Additional related experience and education may substitute Ability to problem solve. Ability to work productively in a fast paced, high-pressure environment. Strong organizational skills with attention to detail. Strong communication and coordination skills with ability to understand process/equipment needs and potential issues. Your work week : The position is based at Kemin Industries in Des Moines, Iowa. The exempt-level position is considered to be 40 hours per week but requires flexibility. The position is lab based but interaction with our production team and work in the pilot lab may mean intermittent exposure to extreme environmental conditions such as temperature, humidity, and extreme weather.
