    CAMPUS DINING invites applications for a SOUS CHEF (CULINARY SERVICES SUPERVISOR II) to oversee the safe production and presentation of food items from the kitchen. This employee will be responsible for all assigned food preparation in the kitchen and will ensure that CBORD recipes are followed. They will also ensure Serving Line Worksheets are completed and all leftover food is properly handled. This individual will actively train students and classified kitchen staff and will envision, create and produce a variety of recipes and menus for Campus Dining. They will also audit and manage CBORD recipes. In the absence of the Production Manager and Chef De Cuisine, the Sous Chef will order food and supplies for upcoming events. The Sous Chef will also supervise and direct all student and classified cooks while in the kitchen. This employee may be required to work in other operations across campus as needed.

    This position requires incumbent to develop a working knowledge of professional management and supervisory experience. They will also develop a working knowledge and experience with forecasting, menus, and recipe production as well as a wide variety of food service equipment and ethnic cuisines. This employee will gain expert knowledge and experience with effectively training employees (fulltime and students). They will also gain a working knowledge of recipe and menu development and production of high-quality food, menus, and dining experience. They will gain experience with food and supply purchasing. This employee will gain expert knowledge and experience receiving, storing, and producing a wide variety of food items. They will gain experience with standard food service reports including profit and loss, labor analysis, and annual operating budgets. This individual will develop a working knowledge of addressing personnel issues and managing conflict. They will develop a knowledge of CBORD recipe creation and auditing. This employee will gain a working knowledge of active participation in appropriate professional organizations such as NACUFS, ACF, NRA etc.

     

    Required Skills:

    • Management and supervisory experience.
    • Experience with high volume food service operations. 
    • Experience working with a wide variety of food service equipment and ethnic cuisines.
    • Experience with display cooking and presenting menus to guests. 
    • Experience with effectively training employees.
    • Experience with recipe and menu development.
    • Knowledge of the production of high-quality food, menus, and dining experience. 
    • Experience with food and supply purchasing.
    • Experience with receiving, storage, and production of a wide variety of food items.  
    • Experience in addressing personnel issues and managing conflict.
    • Excellent written and verbal communication skills.
    • Computer skills.
    • Sufficient to work with the Microsoft Office Suite, Excel spread sheets, and food management systems like CBORD, Computrition etc.
    • Excellent written and verbal communication skills.

     

    Minimum Required Experience:

    • Four (4) year degree in hospitality or food service management and at least two (2) years chef experience or a two (2) year culinary degree and four (4) years’ chef experience or an equivalent combination of education and experience.
    • ServSafe certification or the ability to obtain certification within one year of employment.

     

    PREFERRED QUALIFICATIONS:

    • Experience working with college students as employees and guests.

    WORK SCHEDULE:                 Full-time, 1.0 FTE (40 Hours a week), Monday through Friday 8:00 am to 5:00 pm, 12 months/year

    SALARY:                                $17.05/HR. –Current employee’s rate of pay for this position will be determined by the staff compensation plan and will minimally be this posted salary. For questions and details regarding the staff compensation plan, email the Compensation Department.
