General Description of Position and Summary of Essential Duties and Responsibilities: The Brightwater Apprenticeship Program is a three-year program sanctioned by the State of Arkansas Department of Labor, Office of Apprenticeship Training. The program requires both classroom instruction hours (144 contact hours/year) as well as on-the-job training hours (2000/year). The cooks apprentice will master the fundamental job skills involved in food service through on-the-job training and classroom education over the course of the 6000 hours of employment at Brightwater. The Apprentice will be a full time employee of NWACC and will work with a variety of faculty mentors to learn necessary job skills. After the successful completion of the training period, the Apprentice will receive an official certification of completion of the apprenticeship from the US Department of Labor. Additional Posting Information: Apprentices agree to take courses as the chef/mentor deems advisable and all tuition costs and fees will be paid by Brightwater. The apprentice is required to successfully complete 144 contact hours of relevant instruction each academic year of the apprenticeship. A contact hour represents an hour of scheduled instruction per course and is granted after successful completion. Required Qualifications: Age Applicants must be at least 18 years of age at the time of application. Education A high school diploma, General Education Development (GED) equivalency or other high school equivalency credential is required. Applicant must provide an official transcript(s) for high school and any post high school education. Applicant must submit the GED certificate or other high school equivalency credential, if applicable. Ability to maintain calm under pressure and attend to last minute issues Summary of Essential Duties and Responsibilities 1. Learns different procedures of food preparation. 2. Prepares ingredients for dishes upon the instructions of chefs. 3. Assists in operating commercial cooking equipment such as stoves, cookers, ovens and fryers. 4. Makes sure that food supplies are stored properly and used resourcefully. 5. Maintains refrigerated inventory using First in, First out (FIFO) method. 6. Assists Chefs with preparing food for a variety of occasions and venues. 7. Participates in the preparation, service, and cleanup of events at Brightwater. 8. Follows recipes during food preparation and cooking time. 9. Handles portion control requirements and presentation standards. 10. Assists with the production of breads and pastries for wholesale accounts. 11. Makes sure that the kitchen is clean and organized at all times. 12. Ensures that best food practices and kitchen hygiene protocols are adhered to. 13. Assists with the production of wholesale meat based products (Sausages, hams, roast beef, etc.) for wholesale distribution 14. Uses, maintains, and cleans a wide variety of kitchen equipment and small-wares. 15. Assists with the preparation, service, and cleanup of the food truck at both special events and in daily operations as needed. 16. Assists in checking food deliveries for both quantity and quality standards. 17. Maintains a clean as you go work ethic. 18. Regular, reliable, and non-disruptive attendance is an essential job duty, as is the ability to create and maintain collegial, harmonious working relationships with others. 19.
