Shift:DAY Work Week:M - F Job Summary JOB SUMMARY The Baker's Assistant
is responsible for maintaining high quality bake shop preparation and
sanitation tasks. The tasks include, but are not limited to operating
commercial bakery equipment, having basic baking skills such as scaling,
mixing, proofing, baking, cooking, decorating and use of knives. Must
have a working knowledge of preparing breads, rolls, biscuits, cakes,
creams, custards, fillings, muffins and pies from scratch or mixes.

Pastry Chef in monitoring and recording temperatures of food and
refrigeration d. Assists the Pastry Chef with new food items from the
creation to making it a menu item. e. Demonstrates adherence to

regulatory standards (e.g., Texas Department of Health, Houston
Department of Health and Human Services, HIPAA, etc.) (EF) FINANCE (5%)
- Performs a variety of simple bake shop tasks assisting the baker,
including greasing pans, portion and bake muffins, dinner rolls,
cornbread and cookies, and icing cakes and sweet rolls. Assembles baked
goods according to bake order sheets and special orders for patient
trayline, the Fannin Street Cafe, catering, The Market Place, Bistro,
Blue Water Café, OPC Coffee and Espresso Bar and Dr's Coffee Bar, and
Fondren 12. (EF) 2. Transports food prepared by Food Production to the
Fannin Street Cafe, catering, The Market Place, Bistro, Blue Water Café,
OPC Coffee and Espresso Bar, Dr's Coffee Bar and Fondren 12 as assigned
to meet the volume of sales. (EF) QUALITY/SAFETY (30%) 1. Responsible
for sanitation and washing pots, pans and utensils in accordance with
established cleaning and sanitation procedures. (EF) 2. Sweeps, mops and
cleans floors, walls and work areas, cleans commercial kitchen equipment
and does other assigned cleaning tasks in the Central Kitchen. (EF) 3.
Transports trash, garbage, cardboard and supplies to and from the
Central Kitchen and to assigned areas. (EF) 4. Stores, labels, dates,
inventories and rotates prepared food. (EF) 5. Follows all safety rules
while on the job. Reports accidents promptly and corrects minor safety
hazards. Communicates with peers and management regarding any hazards
identified in the workplace. 6. Ability to rotate all the baked goods.
(EF) SERVICE (30%) 1. Reviews menus the day before to ensure supplies
are in house. (EF) 2. Works in conjunction with the Pastry Chef ensuring
the food is prepared on time, high quality and transferred efficiently.
(EF) 3. Responsible for serving customers in a timely and courteous
manner. (EF) 4. Practices W.E.S.T. (Welcoming, Engaging, Smiling and
Thanking) with all customers in retail and catering environments.

EDUCATION REQUIREMENTS High school graduate or GED required. EXPERIENCE
REQUIREMENTS Minimum of one year experience as a baker's assistant in a
large quantity bakery organization. CERTIFICATES, LICENSES AND
REGISTRATIONS REQUIRED Texas Food Handlers Certificate through American
National Standards Institute (ANSI) is required effective 9/1/2016.
KNOWLEDGE, SKILLS AND ABILITIES REQUIRED Sufficient proficiency in
speaking, reading, and writing the English language necessary to perform
the essential functions of this job, especially with regard to
activities impacting patient or employee safety or security. Ability to
effectively communicate with patients, physicians, family members and
co-workers in a manner consistent with a customer service focus and
application of positive language principles. Must know how to operate
commercial bakery equipment such as divider, rounder, mixer, oven, pie
press, proof box, sheeter, steam jacketed kettle and stove. Must have
basic baking skills such as scaling, mixing, proofing, baking, cooking,
decorating and use of knives. Must know how to prepare items such as
breads, rolls, biscuits, cakes, cookies,creams, custards, fillings,
muffins and pies from scratch or mixes. Assist supervisor in overall
operation of bakery including requisitioning and controlling ingredients
and supplies. Maintain high quality standards of products and service
