Steward NoMad Las Vegas - Las Vegas, NV GENERAL INFORMATION Property: Park MGM Jo b Title : STEWARD Department : NoMad Division: F&B Reports To: F&B Management FLSA Status: Non-exempt Grade: Union Uniform Requirement (YES/NO): Yes Minimum Legal Age Requirement: 18 POSITION SUMMARY : It is the primary responsibility of the Steward to perform cleaning duties under the supervision of the Executive Steward or managers. All duties are to be performed in accordance with departmental and policies, practices, and procedures. POSITION RESPONSIBILITIES/DUTIES: Maintain complete knowledge of correct maintenance, cleaning and use of kitchen and dishwashing equipment Monitor and maintain cleanliness, sanitation and organization of assigned work areas Maintain cleanliness and organization of supply/storage closets; remove trash, wipe down shelves and counters; clean floors, walls and ceilings; remove items which do not belong and place in correct areas Inspect the cleanliness and condition of all washed equipment and areas; re-clean items not meeting standards Maintain complete knowledge of and comply with all departmental policies, procedures and standards Use correct cleaning chemicals for designated items, according to OSHA and Health Department regulations Check the working condition of equipment and machinery in accordance with specifications Clean and store designated equipment, sinks, refrigerators, freezers, service areas, walls, floors, ceilings and kitchen, cafeteria, dumpster and compactor areas as assigned, following all sanitation requirements Handle all wares carefully to prevent breakage and loss Monitor usage of chemicals to maximize consumption Maintain cleanliness and working condition of garbage disposal, grease traps and garbage compactor Maintain cleanliness and organization of work areas immediately throughout shift Stock kitchen lines, restaurant service areas and buffet line with designated cleaned wares, utensils and equipment Operates dishwashing equipment to wash china, glass, silverware and wares to the appropriate SNHD standards Wash pots, pans, wares and additional items in a three compartment sink to the appropriate SNHD standard Use designated chemicals, supplies and equipment to clean various floor surfaces (brooms, mops, etc.) Transport garbage and food waste containers and mats from kitchen and work areas to dumpster or loading dock. Maintain clean and sanitary uniform standard as established by the Director of Stewarding Safely working with chemicals and wearing appropriate protection Able to identify and safely use all kitchen equipment Working as a team, assisting all guests and employees needs and inquiries Utilizes proper sanitation and handling techniques following health and safety standards per SNHD code Clean all surfaces of ovens, grills, hot line burners, hoods/filters, deep fat fryers, steam kettles, steam tables, warming trays, broilers in accordance with departmental standards Other job related duties as requested This job description in no way states or implies that these are the only duties to be performed by the employee in this position. SUPERVISORY RESPONSIBILITIES : N/A EDUCATION and/or EXPERIENCE: Required: One (1) year of previous working in a professional kitchen or similar setting High school diploma or equivalent Effectively communicate in English, in both written and oral forms Preferred: Six (6) months of previous experience in kitchen worker or stove cleaner experience Previous experience working in a similar resort setting. Have strong judgment skills. Excellent interpersonal skills to deal effectively with all business contact including Management, fellow employees and guests.
