Food Management Intern Mid America Festivals - Minneapolis, MN
Full-time, Internship Castle Kitchens Co. producers of the Minnesota
Renaissance Festival and Trail of Terror, is interviewing candidates for
a Food Management Intern for the Festival Season. The Food Management
Intern will be responsible for managing various aspects of the food
service operation and is responsible for following policies and
procedures and meeting federal and state requirements. PRIMARY
RESPONSIBILITIES * Oversee the day-to-day operations of the food and
beverage department. * Works with the Director of Operations to maintain
work lists Monday Friday. * Inspect the cleaning of the food & beverage
booths at festival including the utensils. * Plan for and purchase food
& beverage for the food program. * Inspect the food & beverage storage
facilities are clean & organized. * Maintain required records including
menu, recipes, inventory, booth accounting, work lists, income/expense,
etc. * Plan and review menus; products, procedures, portions,
presentation and pricing. * Research & purchase food service equipment.
- Schedule the food & beverage equipment installations such as soda
machines, trailers etc. * Evaluate & ensure festival food experience is
satisfactory. * Keep records of inventory, supplies and purchases. *
Monitor and compare food & beverage sales regularly. * Ensure food &
beverage program follows proper sanitation procedures. * Work with the
MN Dept. of Health & Dept. of Agriculture to comply with regulations &
work orders. * Ensure safety standards are maintained while cleaning or
food is being cooked. * Contributes in management of food service
employees, including cooks, & food preparers. * Assist in training and
monitoring work quality and safety requirements of employees. EXPERIENCE
& EDUCATION: Associates degree in culinary arts, food service
management, business management or a similar field or an equivalent
combination of education and experience, and substituting one additional
year of qualifying experience for each year of the required education.
SKILLS REQUIRED: Strong communication skills, leadership skills,
organizational skills, computer proficiency, ability to handle a variety
of tasks simultaneously, respond well to pressure and deadlines, as well
as self-motivated and enthusiastic. LICENSES/ REGISTRATIONS: Minnesota
Drivers License; safe driving record; and proof of insurability HOURS: *
Full-time seasonal, May-November * Monday-Friday, May/ June/ July 6
