    Culinary Internship - Dollywood Theme Park - Summer Seasonal Dollywood 90 reviews - Pigeon Forge, TN 37863 Full-time, Temporary, Internship Job Summary Assist in the successful and profitable operation of the unit or group of units assigned while providing excellent guest service. Summary of Major Duties and Responsibilities * Act as quality assurance inspector for food, ensuring a high quality. * Ensure preparation/food handling standards which ensure designated portion control. * Maintain temperature charts and other required paperwork. * Compile with health department and food service department policies. * Know, understand, & enforce the use of the Start Fresh program when necessary. * Ensure all products are presented to guest in a visually appealing and appetizing manner. * Evaluate item sales, makes recommendations on changes, additions, deletions. * Ensure maximum food cost control yielding high profitability in these areas. * Coordinate the issuing, receiving, rotation, portion control, waste control and budget for all necessary supplies. * Budget - achieves budgetary goals for food cost control. * Inventory Control - responsible for maintaining a proper level of inventory at all times. * Enforcing/administer all company and departmental policies regarding grooming, costuming, nametags, conduct, call-ins, etc. * Organize and develop a well-trained, efficient staff whereby, when promotions are available, qualified people are also available. * Create unit schedules that correlate labor hours and sales volume in proportion * Analyze usage of labor to ensure maximum productivity and efficiency. * Ensure that daily cash checks and cash handling procedures are followed. * Ensure unit is organized and maintained in a sanitary clean manner. * Conduct self with the highest standards becoming the position, including proper personal appearance, grooming, and conduct. * Wear costumes that are neat, clean, and pressed. Maintain good personal hygiene. * Be available to work any shift during all operating times.(Employee may be asked to work past their scheduled shift, on slower days they may be sent home after working 3 hours or called off that day.) * Be available/willing to work at different locations on park. * Use equipment such as, but not limited to, cash registers, calculators, knives, fryers, grills, oven, butt pans, brooms, mops, sinks, dough machine, wedgers, dollies, rolling racks, and dish machines, steam tables, warmers, mixers, etc. * Execute special project as assigned by manager/supervisor. Management reserves the right to change and/or add to these duties at any time. Must be able to lift 30 pounds with or without 2- person lift. 30+ pounds require a 2 person lift. * Must take Start Fresh training, as well as implement all safety aspects of Start Fresh training * Must be able to work and tolerate temperatures ranging from 0 to 120 degrees. * Must comply with all Health Dept., Serv Safe, and Company regulations pertaining to Food Safety Handling Procedures Required Experience Educational and Experience Requirements * High school diploma or equivalent * Must be enrolled in a continuing education/college program. * English reading/writing skills are needed to complete all necessary paperwork. * Ability to understand and administer all policies and procedures. * Ability to carry out the execution of ingredient measurements, portion control, time and temperature tables, and compilation of food safety check sheets. * Good math skills are desirable. Supervisor skills are extremely desirable. * Must submit to and pass post-employment offer drug screen and background check.
