    JOB SUMMARY:

    The role of the Productions/Prep Cook is to maintain a clean and orderly kitchen while executing with excellence, the foods needed throughout Dollywood and/or Dollywood’s Splash Country in a manner consistent with the Mission and Values of The Dollywood Company.

     

    SUMMARY OF MAJOR DUTIES AND RESPONSIBILITIES:

    • Implement processes at cost center, designed to ensure maximized operational efficiencies and enhance the guest experience
    • Must be able to do all of the duties required for Cook 2, including knife skills, operating various kitchen equipment including but not limited to: slicers, ovens, smokers, warmers, grills, tilt skillets, kettles, mixers, buffalo chopper, dollies, rolling racks, dishwasher, brooms, mops, etc.
    • Checks with Chef de Cuisine for daily objectives
    • Ensures all dishes are prepared and presented in accordance with standard recipes and presentations established by the Chef de Cuisine
    • Follows Plate Perfect; enforce preparation/food handling standards which ensure designated portion control
    • Know, understand, and enforce the use of the “Start Fresh” program when necessary; must be signed off on Start Fresh within 30 days of accepting this position
    • Make sure all HACCP principles and application guidelines are followed
    • Receiving - all goods are received in good condition and acceptable for use
    • Budget - achieves budgetary goals for food cost control
    • Inventory Control - responsible for maintaining a proper level of inventory at all times
    • Know, understand, audit, and enforce all food safety guidelines meeting Dollywood Company and Sevier County Department of Health Guidelines in order to maintain a clean and sanitary culinary environment
    • Ensures assigned workstation has proper level of par stocks and supplies according to daily menus and caterings
    • Follows all procedures/standards affecting Foods financial standing such as Plate Perfect, recipe compliance, portion control, waste, suggestive selling, clocking in/out properly, and completion of tasks in a timely and accurate manner.

    • Ability to tolerate extreme heat, extreme cold, and humidity necessary to work in kitchens, walk-ins, freezers, climate changes and work outdoors
    • Ability to tolerate detergents and chemicals such as, but not limited to, dish liquids, bleach, Tide, degreaser, oven cleaner and other chemicals necessary to clean/sanitize equipment and environment
    • Ability to handle hectic situations arising from accommodating a large number of guests at one time, changes in work schedule and job assignments
    • Ability to work with others in a friendly, positive manner
    • Must be able to lift 30 pounds with or without 2 person lift. 30+ pounds require a 2 person lift
    • Must be able to work and tolerate temperatures ranging from 0 to 120 degrees
    • Ability to perform other duties as assigned.

    Required Experience

    EDUCATIONAL AND EXPERIENCE REQUIREMENTS:

    • Cook experience is required
    • Ability to read, write, comprehend, and speak English
    • Must be 18 years of age
    • Must pass a criminal background check
    • ServSafe Certification is required within 30 days of accepting this position
