    The Culinary Services Purchaser is responsible for effectively executing purchasing strategies of the Food & Beverage operations for Dollywood Theme Park as well as meeting property, department, and company objectives and goals.  These responsibilities will be performed in a manner consistent with the mission, vision, operating philosophies and standards of the Dollywood Company.

     

    SUMMARY OF MAJOR DUTIES AND RESPONSIBILITIES

     

    • Influence and implement strategies for purchasing area aligned with the company’s food and beverage objectives.
    • Influences and contributes to COS performance for division.
    • Verifies purchase requisitions by comparing items requested to master list; clarifying unclear items; recommending alternatives.
    • Forwards available inventory items by verifying stock; scheduling delivery.
    • Prepares purchase orders by verifying specifications and price; obtaining recommendations from suppliers for substitute items; obtaining approval from requisitioning department.
    • Maintain and research pricing for all purchased goods.
    • Ensure delivery; all goods required to run the F&B department are available when necessary coordinating with suppliers and receiving staff. 
    • Obtains purchased items by forwarding orders to suppliers; monitoring and expediting orders.
    • Improve quality; Verifies receipt of items by comparing items received to items ordered; resolves shipments in error with suppliers.
    • Authorizes payment for purchases by forwarding receiving documentation.
    • Keeps information accessible by sorting and filing documents.
    • Maintain all specifications and update them in conjunction with the chef on a constant basis.
    • Maintain menus and menu creation in POS and all functions of menu execution from purchase to guest.
    • Develop/maintain reports pertaining to revenue, menu engineering, labor and cost of sales.
    • Provides purchasing planning and control information by collecting, analyzing, and summarizing data and trends.
    • Maintain par levels of stock; complete requisition for additional supplies as appropriate.
    • Provides product theoretical usage to shops based on par levels in conjunction with inventories. 
    • Maintain all records needed for accounting including credit follow up and shop notification on credit.
    • Leverage technology – Ensure new systems and technology are managed with enterprise governance.
    • Super-user for Inventory.
    • Work in a collaborative environment that requires communication, coordination and problem solving with other departments and with the vendors.
    • Train employees on proper goods receiving, storage methods, and all procedures for proper product handling.
    • Communicate Schedule needs for employees based upon forecasted volumes.
    • Communicates effectively to team on product supply chain; communicating any business change.
    • Coordinates with the DW Executive chefs & Corporate Director of Food and Beverage Purchasing to maintain and adhere to all contracts.
    • Provide regular updates to vendors on product issues and business changes.
    • Partners with the Culinary Services Analyst to ensure adequate cross training exists between positions so there is no loss in productivity in one’s absence.

    Required Experience

    • Bachelor’s degree in a related field required (Accounting, Business, etc.) required.

    • Ability to influence in a positive manner and drive organizational acceptance of changes in policies and procedures as needed.
    • Ability to apply logic and common sense toward complex issues required.
    • Ability to analyze situations and make decisions utilizing consultative decision-making, when appropriate.
    • Proven skills in time management, short- and long-term planning and strong organizational skills to be able to coordinate multiple tasks.
    • Advanced computer skills and working knowledge of Microsoft Office (Word, Excel, PowerPoint, Outlook).
    • Must successfully complete a post-employment offer background check and drug screen.
    • Strong written and verbal communication skills with the ability to write reports with clear and concise wording.
