Position Overview
Aiona is seeking an experienced, service-driven Assistant General Manager (AGM) to join the opening leadership team. This role will support the General Manager in overseeing daily restaurant operations while helping to build culture, systems, and standards from the ground up.
The AGM will play a critical role in driving exceptional guest experiences, developing a high-performing front-of-house team, and ensuring operational excellence across service, financial performance, and hospitality execution.
Key Responsibilities
Support the General Manager in all aspects of daily operations and leadership
Lead floor operations during service, ensuring exceptional hospitality and smooth execution
Train, coach, and develop FOH managers, supervisors, and hourly staff
Uphold and model Aiona’s service standards, culture, and brand values
Assist in hiring, onboarding, and training for opening and ongoing staffing needs
Partner with the culinary and sommelier teams to ensure seamless guest experiences
Handle guest feedback and service recovery with professionalism and care
Ensure compliance with health, safety, labor, and alcohol regulations
Maintain cleanliness, organization, and operational readiness throughout the restaurant
Operations, Financials & Systems
Assist with scheduling, labor management, and payroll accuracy
Support inventory management, ordering, and cost controls for FOH and beverage
Monitor sales performance, labor costs, and key operational metrics
Help implement and maintain systems for POS, reservations, and guest management
Participate in pre-shift meetings, service evaluations, and post-shift reporting
Leadership & Culture
Serve as a visible leader on the floor, setting the tone for service and teamwork
Foster a positive, inclusive, and accountable work environment
Support performance evaluations, coaching conversations, and disciplinary actions
Collaborate with ownership and leadership to continuously improve operations
Qualifications
5+ years of experience in restaurant management, preferably in an upscale or high-volume environment
Strong leadership, organizational, and communication skills
Passion for hospitality, service excellence, and team development
Experience with POS and reservation systems (Toast and OpenTable a plus)
Ability to thrive in a fast-paced, opening-team environment
Flexible availability, including evenings, weekends, and holidays
Sommelier experiences a plus; open to candidates willing to work toward certification
