    Position Summary

    The Assistant Kitchen Manager (AKM) supports daily kitchen operations at The Bull, ensuring food quality, speed of service, cleanliness, and team accountability. This role is hands-on, leadership-driven, and focused on execution—helping the kitchen run efficiently while maintaining high standards and low waste.

    The AKM leads by example on the line, enforces systems, and helps develop a strong, reliable kitchen team.

    Key Responsibilities

    Kitchen Operations

    Execute daily service to The Bull’s standards for speed, consistency, and quality

    Work all stations as needed during service

    Ensure recipes, portions, and plating are followed exactly

    Assist with opening and closing procedures

    Maintain a clean, organized, inspection-ready kitchen at all times

    Team Leadership

    Lead line cooks and prep staff during service

    Train new hires on recipes, stations, and kitchen standards

    Hold staff accountable for performance, attendance, and cleanliness

    Communicate clearly and professionally with the team and management

    Help maintain a positive, disciplined kitchen culture

    Inventory & Waste Control

    Assist with ordering, receiving, and rotating inventory (FIFO)

    Monitor prep levels to prevent overproduction and waste

    Track food waste and report issues to the Kitchen Manager

    Ensure proper storage, labeling, and dating of all products

    Food Safety & Compliance

    Enforce all food safety, sanitation, and health code standards

    Ensure proper temps, logs, and cleaning schedules are followed

    Address safety concerns immediately

    Support & Growth

    Assist the Kitchen Manager with scheduling, prep planning, and menu execution

    Provide feedback on systems, workflow, and efficiency improvements

    Step into leadership when the Kitchen Manager is not present

    Qualifications

    2+ years kitchen experience (line cook or lead preferred)

    Strong understanding of high-volume service

    Proven leadership and communication skills

    Knowledge of food safety and sanitation practices

    Ability to stay calm and focused under pressure

    Reliable, organized, and detail-oriented

    Physical Requirements

    Ability to stand for long periods

    Lift up to 50 lbs

    Work in a fast-paced, hot kitchen environment
