Under new ownership and after over three years of extensive renovation, we are gearing up for a grand reopening in January 2024. As we embark on this exciting chapter, we're seeking passionate individuals to join our team and be a part of something truly special.

    Job Summary: As the Executive Chef at August The Mansion, you will be responsible for overseeing all aspects of our kitchen operations, including menu development, food preparation, quality and cost control, and kitchen staff management. You will bring your culinary expertise to create innovative and exceptional dishes that reflect our commitment.

    Key Responsibilities:

    Menu Development: Design and develop fresh, from scratch, seasonal menus and specials that showcase American cuisine as a melting pot of globally infused flavors. Ensure the menu is diverse and appealing to a wide range of tastes, including maintaining the consistency of menu staples and favorites. Adjust menu and specials based on product availability and inventory to maximize quality and reduce waste.

    Kitchen Operations: Oversee day-to-day kitchen operations, including food preparation, cooking, plating, and cleaning. Maintain high standards of food quality, presentation, sanitation, and taste. Monitor portion control and food costing to maximize profitability.

    Team Leadership: Recruit, train, and mentor kitchen staff, including sous chefs, line cooks, and kitchen assistants. Foster a collaborative and motivated kitchen team, promoting a culture of excellence, creativity, and accountability.

    Communication & Collaboration: Collaborate with the owners and front of house management to create a positive and transparent working environment where every member of the team is aware of what's going on and feels like their contributions are valued. Respectfully communicate where there may be opportunities for improvement, and be proactive in communicating ideas or upcoming changes that may have an impact to others or the business.

    Be Accountable: Take ownership when things don't go the way you thought they would - big and small. You will be given a wide degree of independence, control, and authority which comes with a set of expectations, including holding yourself and your team accountable. We're at our best when we can trust one another at our worst moments to come together for support and solutioning.

    Quality Control: Establish and maintain strict quality control procedures to ensure consistency and excellence in every dish. Conduct regular tastings and evaluations to uphold our culinary standards.

    Food Safety and Sanitation: Implement and enforce the highest of food safety and sanitation standards, following local health regulations and best practices. Ensure the kitchen is a safe and clean working environment to the benefit of the team and our customers.

    Vendor & Inventory Management: Manage inventory levels, order supplies, and track food costs to optimize resource utilization and minimize waste. Conduct inventory checks as required by ownership. Keep invoices and receipts organized and coordinate for submission and reporting to the restaurant manager. Work closely with suppliers to maintain quality and availability of ingredients. Establish and maintain relationships with vendors for all products, including commercial, local, farm-fresh, seasonal and unique internationally-sourced ingredients.

    Budget Management: Collaborate with the restaurant management team to set and achieve budget goals. Monitor food and labor costs to maintain profitability while delivering exceptional dining experiences.

    Creativity and Innovation: Bring a creative and innovative approach to the culinary offerings, staying updated on industry trends and emerging flavors. Introduce new and exciting dishes to keep the menu fresh and engaging.

    Guest Experience: Collaborate with front-of-house staff to ensure a seamless and exceptional dining experience for our guests. Address guest feedback and make improvements as needed.

    Qualifications:

    5+ years experience as an Executive Chef in a high-end restaurant or similar establishment.

    Culinary degree or equivalent professional training.

    Strong knowledge of American and international cuisines, as well as culinary trends.

    Exceptional culinary creativity and presentation skills.

    Leadership and team management abilities.

    Excellent communication and organizational skills.

    Illinois Food Safety Manager certification.

    Ability to work under pressure and maintain a high level of professionalism.
