Job Summary J.Bone’s Barbecue is looking for a dedicated and skilled Pitmaster / Prep-Cook to join our crew. This is an overnight position, responsible for running the smoker, smoking meats to perfection, and setting the kitchen up for the next day’s service. If you take pride in your craft, know your way around a smoker, and love working with a team that values quality, this role is for you.
Responsibilities
Operate and maintain smokers, grills, and related cooking equipment during overnight shifts.
Trim, season, and prepare meats for smoking and service.
Monitor pit temperatures and cook times to ensure consistent, high-quality results.
Slice and portion meats for service with precision and care.
Assist with preparing side dishes, sauces, and other menu items as needed.
Maintain a clean and organized pit/kitchen area, including equipment cleaning.
Follow all food safety, handling, and sanitation standards.
Work as part of the team to ensure the kitchen is ready for the next day’s service.
Qualifications
You must be self motivated and good with time
Experience with barbecue, grilling, or meat smoking strongly preferred.
Knowledge of meat cuts, trimming, and seasoning.
Ability to work overnight shifts (including weekends and holidays).
Physically able to lift 50 lbs and stand for extended periods.
Strong work ethic, reliability, and a passion for great barbecue.
Previous line cook or kitchen experience is a plus.
ServSafe Manager certificate a bonus
