Job Summary:
We are seeking a BBQ Production Cook to join the team at Escuela! In this position, you will be responsible for prepping raw products (brisket, ribs, chicken, etc.), cooking/smoking said products, as well as various vegetables from our farm. You will also be tasked with cutting a variety of cooked meat and vegetables during service. Being comfortable with a knife is a plus, but we will provide training. Our ideal candidates are experienced and committed to creating an excellent experience for our guests, and a drive to excel in a team-driven environment with an array of moving parts.
Duties and Responsibilities:
Set up the kitchen with necessary tools and equipment
Prepping raw product
Operating our 1000-gallon smokers
Quality control of high-volume cookery
Maintain appropriate levels of inventory and restock when necessary
Follow all food safety regulations
Participate in daily kitchen opening or closing procedures
Perform other duties as assigned by our chef team
Qualifications:
Previous experience in a similar role is preferred
Ability to use professional-grade kitchen appliances and equipment
Advanced knowledge of BBQ techniques and recipes
Strong organizational and time-management skills
Knowledge of food safety practices
Available for early morning shifts
Open to feedback and the ability to utilize it as a tool
Ability to meet the physical demands of the position, including standing for long periods and lifting up to 40 pounds
