    About Aiona

Opening in March 2026 in the heart of downtown Sacramento, Aiona is a bold new culinary destination celebrating the vibrant traditions of Mediterranean cuisine through the ancient art of wood-fired cooking. Featuring an open kitchen, a 3,000-bottle wine cellar curated by an Advanced Sommelier, and refined indoor and outdoor dining spaces, Aiona offers an immersive, upscale experience unlike anything else in the city.

Our mission is to bring world-class food, wine, and hospitality to Sacramento while becoming a premier destination for dining and private events.

    Position Overview

We are seeking an experienced and motivated Bar Supervisor to help lead our bar program and support the opening of Aiona. This role will be responsible for overseeing daily bar operations, supporting and mentoring the bar team, and ensuring consistent, elevated beverage service for our guests, including business lunches, government and lobbyist dinners, pre-theater traffic, and private events.

The Bar Supervisor will work closely with ownership, the Beverage Director/Sommelier, the operations team, and both FOH and BOH leadership to deliver seamless, memorable experiences at the bar and throughout the dining room.

    Responsibilities

    · Lead the bar during service as a working supervisor, modeling Aiona’s hospitality and service standards.

    · Oversee bar setup, breakdown, cleanliness, and completion of opening/closing side work.

    · Ensure consistent execution of all cocktails, wine service, beer, and non-alcoholic beverages according to Aiona’s recipes and presentation standards.

    · Supervise and support bartenders and bar support staff; provide real-time coaching on pace, accuracy, and guest interaction.

    · Collaborate with the Beverage Director/Sommelier on cocktail development, wine-by-glass selections, and seasonal beverage offerings.

    · Assist with training the FOH team on beverage knowledge, responsible alcohol service, and pairing suggestions, with an emphasis on Mediterranean flavors and Aiona’s menu.

    · Manage the service bar in coordination with floor staff to support high-volume business dinners, pre-event rushes, and private functions.

    · Support private dining and special events by executing specialty cocktails, pre-batched drinks, and event-specific bar setups as needed.

    · Assist with ordering, inventory counts, and cost control for spirits, mixers, wine-by-the-glass, beer, and bar prep items.

    · Monitor pours, comps, and waste, helping to protect beverage margins while maintaining a generous, guest-first mindset.

    · Ensure all bar operations comply with state and local alcohol service regulations and Aiona’s internal policies for ID checks and responsible service.

    · Help maintain bar-related POS programming (button layout, modifiers, recipes) and communicate any needed updates to management.

    · Address guest concerns at the bar promptly and professionally, escalating to management when appropriate.

    · Foster a positive, accountable team culture built on reliability, professionalism, and mutual respect.

    · Ensure exceptional hospitality and guest satisfaction at the bar from first greeting through last call and check presentation.

    Qualifications

    · 3+ years of bartending experience in an upscale or casual fine dining restaurant, hotel, or high-volume bar; prior lead or supervisory experience strongly preferred.

    · Strong classic cocktail and spirits knowledge, with confidence in wine service; interest in Mediterranean cuisine and wine is a plus.

    · Proven ability to manage high-volume service while maintaining organization, accuracy, and composure.

    · Demonstrated leadership skills, including training, coaching, and holding team members accountable in a professional manner.

    · Excellent communication and guest-facing skills; polished, professional demeanor with business and VIP clientele.

    · Proficiency with restaurant POS systems (Toast or similar a plus) and basic inventory and ordering processes.

    · Hands-on leadership style and willingness to assist with all aspects of bar operations, including prep, polishing, and running drinks.

    · Ability to work a flexible schedule, including evenings, weekends, holidays, and key event periods.

The above requirements and benefits are not intended to be all-inclusive.
