About Aiona
Opening in March 2026 in the heart of downtown Sacramento, Aiona is a bold new culinary destination celebrating the vibrant traditions of Mediterranean cuisine through the ancient art of wood-fired cooking. Featuring an open kitchen, a 3,000-bottle wine cellar curated by an Advanced Sommelier, and refined indoor and outdoor dining spaces, Aiona offers an immersive, upscale experience unlike anything else in the city.
Our mission is to bring world-class food, wine, and hospitality to Sacramento while becoming a premier destination for dining and private events.
Position Overview
We are seeking a hard-working, detail-oriented Busser to join our opening team and support evening service at Aiona. This role is focused on lunch, dinner and/or nighttime shifts, helping maintain a clean, organized dining room and supporting servers and food runners during busy business dinners, government and lobbyist functions, pre-theater service, and private events.
The Busser will work closely with servers, food runners, bartenders, and FOH leadership to ensure smooth service, fast table turns, and a polished guest experience throughout the dining room and patio.
Responsibilities
· Support evening service by pre-busing, clearing plates, glassware, and debris quickly and quietly.
· Reset tables efficiently with proper place settings, glassware, and table décor according to Aiona’s standards.
· Maintain clean, organized service stations stocked with silverware, glassware, napkins, and polishing supplies.
· Assist servers and food runners by delivering food, water, bread, and additional items as needed.
· Help maintain the overall cleanliness of the dining room, including floors, service stations, and restrooms as assigned.
· Monitor tables for guest needs (water refills, crumb sweeping, clearing) and communicate any issues to servers or managers.
· Support private dining and large groups by helping with room setup, breakdown, and quick resets between courses or parties.
· Assist with polishing glassware, silverware, and maintaining side work before, during, and after service.
· Follow all safety and sanitation procedures, including proper handling of glass, plates, and cleaning chemicals.
· Work as part of a coordinated FOH team, communicating clearly and professionally with servers, hosts, runners, and managers.
· Uphold Aiona’s standards of hospitality, appearance, and professionalism at all times
Qualifications
· 1+ year of experience as a busser, food runner, or support role in a full-service restaurant; upscale or casual fine dining experience preferred.
· Strong work ethic with the ability to move quickly while maintaining a high level of cleanliness and detail.
· Comfortable being on your feet for extended periods and carrying bus tubs, trays, and glassware safely.
· Ability to stay calm, organized, and focused during busy PM service and high-volume nights.
· Team-oriented mindset with clear, respectful communication skills.
· Reliable and punctual, with the ability to work lunch, evenings, weekends, holidays, and major event nights.
· Willingness to take directions, learn Aiona’s service standards, and jump in wherever needed to support the team.
The above requirements and benefits are not intended to be all-inclusive.
