Position Summary

Essential Duties and Responsibilities
- Portion and cut a variety of steaks and meats to restaurant specifications
- Operate meat-cutting equipment including tenderizing machines, band saws, and grinders
- Maintain a clean and sanitary work area and ensure equipment is cleaned and sanitized after each use
- Monitor daily meat inventory and ensure the restaurant is stocked with all necessary cuts (steaks, ground meat, cutlets)
- Communicate with the Kitchen Manager to ensure timely ordering of primal cuts and other supplies
- Adhere to all food safety and health regulations
Knowledge, Skills and Abilities
- Proven experience as a butcher or meat cutter (steakhouse or high-volume kitchen preferred)
- Strong knowledge of meat grades, cuts, and portioning techniques
- Familiarity with meat processing equipment (band saws, grinders, tenderizers)
- Attention to detail and commitment to cleanliness and food safety
- Ability to work independently and manage time efficiently within flexible scheduling
