    JOB SUMMARY

     This position exists to participate in all activities, including food preparation, plate presentation, ware washing, and cleanliness and sanitation procedures. The Chef Assistant will also lead line cooks, prep staff and dishwashers to ensure shift is successful in a manner consistent with the Mission and Values of The Dollywood Company. 

    SUMMARY OF MAJOR DUTIES & RESPONSIBILITIES

     

    • Checks with Sous Chef for daily objectives.
    • Directs all HOH staff to ensure a successful shift.
    • Ascertains all specials and methods of preparation and presentation.
    • Ensures all dishes are prepared and presented in accordance with standard recipes and presentations established by the Sous Chef.
    • Cleans and organizes workstation.
    • Maintains a clean and sanitary culinary environment in compliance with all local and federal health codes.
    • Performs banquet and kitchen line functions as directed by the Sous Chef, including sautéing, production, plating and grilling.
    • Ensures assigned workstation has proper level of par stocks and supplies according to daily menus and banquets.
    • Checks product/supply levels and adjusts to daily needs and communicates any shortages.
    • Leads and participates in daily line ups.
    • Assists with staff instruction and follows through training throughout service.
    • Assumes duties of Sous Chef in absence or as directed.

    • Must have manual dexterity necessary to complete all job duties.

    • Able to sit and/or stand for long/short periods.

    • Able to maintain good personal hygiene.

    • Able to get along with other employees to work out problems and resolve conflicts.

    • Able to comprehend instructions and retain information.

    • Able to maintain dependable work attendance and flexibility with assigned work schedules including any required overtime, evenings, weekends and holidays.

    • Able to endure a fast-paced, dynamic environment.

    • Able to be flexible to handle frequent changes in priorities.

    • Able to prioritize tasks and complete assignments on time.

    • Skilled with cooking and baking various types of food/dishes.

    Required Experience

    • Must have a minimum of 3 years cooking experience in similar operation.
    • Must be able to obtain Food handler certification.
    • Must be at least 18 years old.
    • Basic computer knowledge and usage preferred.
    • Must pass a pre-employment background check.
