  • Responsibilities

    JOB DESCRIPTION:

    Directly responsible for all kitchen functions including preparation and maintenance of quality standards; sanitation and cleanliness; training of employees in methods of cooking, preparation, plate presentation, portion and cost control and sanitation and cleanliness.

    ESSENTIAL DUTIES:

    Ensure that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards

    Provide orientation of company and department rules, policies and procedures and oversee training of new kitchen employees

    Fill in where needed to ensure guest service standards and efficient operations

    Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the restaurant’s preventative maintenance programs

    Work with restaurant managers to plan and price menu items. Establish portion sizes and prepare standard recipe cards for all new menu items.

    Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures

    Oversee and ensure that restaurant policies on employee performance appraisals are followed and completed on a timely basis

    Assist in scheduling as required by anticipated business activity while ensuring that all positions are staffed when and as needed and labor cost objectives are met

    Be knowledgeable of restaurant policies regarding personnel and administer prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures

    Oversee the training of kitchen personnel in safe operation of all kitchen equipment and utensils

    Responsible for training kitchen personnel in cleanliness and sanitation practices

    Responsible for maintaining appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment and food storage areas

    Check and maintain proper food holding and refrigeration temperature control points

    Responsible for ensuring compliance with all policies and procedures as we as all local, state and federal laws and regulations

    Responsible for all Cleanliness and sanitation and team training

    Monitors and ensures compliance with all guidelines for operations

    Handles and provides resolution to guest complaints and employee issues

    Assigns duties to employees and observes performance to ensure adherence to restaurant policies, standards and procedures

    Interact positively with customers

    Responds quickly to guest requests and follows up to ensure guest satisfaction

    Assist in front of house operations, as needed

    Any other tasks assigned by a manager

    MINIMUM REQUIREMENTS:

    Must have a minimum of 3 years of experience in varied kitchen positions including food preparation, line cook, fry cook and expediter

    Previous kitchen supervisory experience preferred

    Must have full availability and be able to work days, evenings, nights, weekends, and holidays

    KNOWLEDGE / SKILLS / ABILITIES:

    Ability to read, write and speak English (multi-lingual a plus)

    Ability to understand, follow and give written and oral instructions

    Ability to speak, read and comprehend instructions, short correspondence and policy documents, as well as converse comfortably with customers

    Ability to interact with guests and coworkers in a friendly, enthusiastic and outgoing manner

    Ability to work harmoniously with fellow employees and guests

    Ability to be a team-builder with outstanding coaching skills

    Ability to be innovative, creative and able to think outside the box

    Ensure uniform and personal appearance are clean and professional

    Ability to (>8 hours per day) reach, bend, twist, pull, push, grasp, walk, stand, stoop, kneel, run, sit, climb, reach overhead, and bend to perform normal job functions

    Ability to work in a standing position for long periods of time (up to 9 hours)

    Ability to lift and/or move up to 40 lbs

    Ability to frequently immerses hands in water and water diluted with chemical solutions

    Ability to work indoors and outdoors, including prolonged exposure to extreme temperatures
