Wonderful opportunity exists at Carter Creek Winery Resort & Spa! We are currently looking for an experienced Sous Chef to join our team. This position will be responsible for managing the kitchen and personnel, ensuring the quality of all menu items, creates food items and menus. We are seeking someone with prior experience as hotel/resort Executive Sous Chef or a Seasoned Sous Chef with strong leadership skills.
Responsibilities include but are not limited to the following:
Production of all meals, food quality and presentation
Review daily menu specials and offer feedback
Trains and develops kitchen staff; trains cooks/kitchen staff in the importance of consistency in preparation and presentation
Purchase goods and manage inventory
Oversees the activities of kitchen staff with an awareness of quality and costs
Maintains a clean, organized and safe kitchen; ensures all sanitation procedures are being followed; ensures adherence to all health and safety regulations and procedures
Establishes procedures, prepares and coordinates schedules and expedites workflow
Ensures all necessary reports and forms are completed daily
Counsel, discipline, and evaluate kitchen employees
Requirements include but are not limited to the following:
5 years of line supervision and kitchen management experience
Culinary degree or accredited culinary program (a plus)
Strong knowledge of food products, standard recipes and proper presentation
Ability to analyze, forecast and make judgments to ensure proper payroll and production control
Ability to effectively communicate with people at all levels
Be a highly motivated and enthusiastic leader
Must be able to successfully prioritize, delegate, organize and multi-task
