    The Chef/Cook will be working at a full service fishing lodge in Sitka, Alaska.

    The lodge serves breakfast, appetizers, dinner and dessert each day there are fishing clients. Typically 7 days per week mid May through the first week of September each season. Guests vary from 12-19 guests each group.

    Our breakfast consist of a rotating menu:

    Pancakes w/bacon, Ham and Cheese Omelettes, french toast and sausage, biscuits and gravy and breakfast burritos on overlapping days

    All plated served to customer with the exception of the breakfast burritos which are served on the boat on some 1st day of their trip.

    Appetizers:

    Served buffet style each afternoon when they arrive in from fishing

    Soups, other finger foods to hold them over for dinner

    Dinners are a rotating menu:

    Halibut dish, with side and veg

    Pork Chops, with side and veg

    Prime Rib, with side and veg

    Salmon dish, with side and veg (this meal is for our 4 day trips and is typically for less than a full 12-19)

    Also, each evening meal we serve a fresh salad and bread (rolls, or garlic bread) to start the service

    Desserts each evening are also rotating

    Typical day:

    Each morning begins at 4am with breakfast served at 5:15am

    Appetizers 4-4:30pm depending on their arrival in from fishing

    Dinner, salads on the table at 6pm, dinner plated beginning at 6:15pm, follow up with dessert by 6:50pm

    Need a self starter, good organizational skills, sanitary, able to cook for larger groups, knowledge of special diets as needed, able to judge preparation times for each meal all a must. Prime rib is our last night "Brand" meal. It is very important to know how to prepare accordingly.

    We have staff that arrive at 4:30am for breakfast service and clean up.

    In the afternoon, staff arrives at 3pm for afternoon service and we have additional staff that arrives at 4pm for clean up and dinner service.

    This position also includes housing.
