    A premier hospitality company in New York City is seeking an experienced and driven Chef de Cuisine to lead the culinary operations of a high-volume, upscale dining concept.

    This is a hands-on leadership opportunity for a chef who thrives in a fast-paced environment and can balance culinary excellence with strong team leadership, operational discipline, and consistency. The Chef de Cuisine will oversee daily kitchen operations while partnering closely with the Executive Chef and leadership team to maintain the highest standards of food quality, execution, and hospitality.

    Strong sushi knowledge and hands-on sushi experience are required for this position. The Chef de Cuisine will be responsible for overseeing sushi production and ensuring proper technique, product handling, quality, consistency, and execution.

    Duties and Responsibilities

    Lead and oversee all day-to-day culinary operations, including preparation, production, and service

    Directly oversee sushi preparation, production, and service, ensuring proper technique, quality, consistency, presentation, and execution

    Provide hands-on support with sushi operations as needed during prep and service

    Ensure proper handling, storage, rotation, and preparation of raw fish and other sushi ingredients

    Maintain exceptional standards for food quality, consistency, presentation, and execution

    Provide active, hands-on leadership during both prep and service

    Train, coach, develop, and hold culinary team members accountable to established standards

    Train and develop culinary team members on sushi preparation, handling, and execution standards

    Manage kitchen staffing, scheduling, workflow, and daily deployment based on business needs

    Ensure recipes, portioning, plating, and preparation standards are consistently followed

    Oversee ordering, inventory, receiving, product rotation, and waste control

    Monitor food and labor costs and support achievement of established financial targets

    Maintain proper food handling, sanitation, storage, and workplace safety standards

    Ensure compliance with NYC Department of Health and applicable food safety requirements

    Partner closely with FOH leadership to ensure smooth service and an exceptional guest experience

    Assist with menu development, specials, tastings, and ongoing culinary innovation

    Maintain organization, cleanliness, and accountability throughout all kitchen areas

    Oversee opening and closing procedures and ensure the kitchen is fully prepared for each service

    Foster a professional, respectful, collaborative, and team-oriented kitchen culture

    Qualifications

    5+ years of progressive culinary experience in high-volume, upscale, or fine-dining restaurants

    Previous experience as a Chef de Cuisine, Executive Sous Chef, Senior Sous Chef, or comparable culinary leadership role

    Required hands-on experience with sushi preparation and sushi kitchen operations

    Strong knowledge of sushi techniques, raw fish handling, product quality, storage, sanitation, and service standards

    Ability to confidently oversee, train, and support a sushi team

    Experience managing sushi production in a high-volume restaurant environment strongly preferred

    Strong knowledge of kitchen operations, food preparation, sanitation, inventory management, and cost controls

    Demonstrated ability to lead, train, develop, and motivate a culinary team

    Excellent organizational and time-management skills

    Strong communication, leadership, and problem-solving abilities

    Ability to remain composed and lead effectively during high-volume service

    Exceptional attention to detail and commitment to culinary excellence

    Working knowledge of NYC food safety and sanitation requirements

    NYC Food Protection Certificate preferred or required based on operational needs

    Flexible availability, including nights, weekends, and holidays

    Ability to meet the physical demands of a professional kitchen environment
