Job Summary
A Butcher has extensive knowledge of meat, poultry, fish and seafood. Their main duties include the fabrication of sub primal meat cuts, whole poultry, whole fish and basic crustacean cookery. Other preparations include buffet preparation as well as a knowledge of the uses of protein by-products to be used in different applications throughout the restaurant and theater. Cleaning up prep areas and making sure the kitchen is stocked are also within the duties of the butcher. We are looking for dedicated team members who want to grow with an incredible company.
Responsibilities
· Receiving orders and properly storing and labeling of all proteins
· Following HACCP guidelines and procedures
· Working with the chefs in organizing the weekly pars of proteins and buffet items
· Following recipes for marinades, rubs and basic cooking preparations, including poaching, roasting, steaming, braising etc.
· Utilizing the byproducts of proteins to be used for other purposes. Examples include Using the left-over pieces after fabricating of tenderloin to make steak tartare
· Prepare food for service (e.g. chopping vegetables, butchering meat, or preparing sauces)
· Cook menu items in cooperation with the rest of the kitchen staff
· Answer, report, and follow executive or sous chef’s instructions
· Clean up station and take care of leftover food
· Work with other staff members in providing proteins for family use.
· Stock inventory appropriately
· Record protein inventories on a weekly basis
· Comply with nutrition and sanitation regulations and safety standards
· Maintain a positive and professional approach with coworkers and customers
Qualifications
· Excellent understanding of various cooking methods, ingredients, equipment, and procedures
· Have an experienced palate,
· Accuracy and speed in executing assigned tasks
· Familiar with industry’s best practices
· Certified in Food Safety
· Aptitude for multi - tasking
· Able to stand for extended periods of time and lift a minimum of 25 lbs
