    Join our management team! DEROMO'S GOURMET RESTAURANT & MARKET is a fun, upscale authentic Italian restaurant. We're looking for an EXECUTIVE CHEF with a passion for delivering an exceptional dining experience to every guest, who sets the bar high for service and leads staff by example, and thrives in a fast paced, high volume restaurant and market known for outstanding food and service.

    JOB SUMMARY: 

    Creates and produces all food products from the kitchen, banquets/events and market (including prepared foods, meat, deli, pizza, grab and go, bakery) while ensuring sanitation procedures and the highest of quality standards in timing, taste and presentation. Responsible for developing menus, specifying product standards, controlling and maintaining food inventories and assuring smooth, safe and profitable operations.   Leadership and development of culinary team to ensure a positive and productive work environment. 

    ESSENTIAL FUNCTIONS:

    • Leads culinary department delegating and assigning duties and responsibilities to the Sous Chef, and staff to ensure the accurate and timely production of all meals.
    • Create and cost out all menus for F&B operation
    • Ensures that high standards of sanitation, cleanliness and safety are always maintained throughout all kitchen areas
    • Develops standard recipes and techniques for food preparation and presentation to include photos, recipe audits and shrink tests to ensure consistently high quality and to minimize food costs; exercises portion control for all items served and establishes menu selling prices
    • Establishes and maintains controls to minimize food and product waste and theft
    • Prepares necessary data for applicable parts of the budget; projects annual food, labor and other costs and monitors actual financial results; takes corrective action as necessary to help assure that financial goals are met
    • Attends management meetings
    • Consults with the Director of Catering about food production aspects of banquets and events.
    • Ensures superior levels of performance and dependable, friendly service to external and internal clients. 
    • Regularly inspects work and work areas and conducts performance reviews for all culinary staff.
    • Direct and train staff on any current and new food items and follow up to ensure comprehension. 
    • Ensures proper staffing for maximum productivity and high standards of quality; controls food and payroll percentages and costs to achieve maximum profitability
    • Responsible for the recruitment of the culinary staff and their ongoing development.
    • Schedules and coordinates the work of, cooks, chefs and other kitchen team members to assure that food preparation is correct and within budgeted labor cost guidelines
    • Evaluates products to assure that quality, price and related goods are consistently met
    • Establishes and maintains a regular cleaning and maintenance schedule for all kitchen areas and equipment
    • Ensures that representatives from the kitchen attend service lineups and meetings
    • Ensure all product orders needed in keeping in line with DeRomo’s and Columbus Hospitality Management compliance. 
    • Safeguards all food preparation by implementing training procedures to increase staff knowledge about safety, sanitation and accident prevention
    • Responsible for menu develop with emphasis of staying up to date with trends while ensuring the authenticity of the DeRomo’s brand.
    • Continual front of the house presence in all areas to ensure guest satisfaction
    • Ensure all necessary reports and forms are completed daily and filed in accordance with standards.
    • Review the production records during and after every meal to ensure they are being properly filled out.
    • Department meetings are to be held monthly
    • Have complete knowledge of all policies, standards and procedures of the department

       

    QUALIFICATIONS, EXPERIENCE, SKILLS, AND ABILITIES:

    • Minimum 7 years of progressive culinary experience with knowledge of advanced cooking techniques. Prior experience as Executive Chef preferably in high volume restaurant & market
    • Purchasing and procurement experience
    • Proven track record in fiscal management
    • Manager Serve safe certification
    • Demonstrates creative ability.
    • Ability to communicate verbally and in writing in English.
    • Excellent organizational, time management and communication skills.
    • Professional conduct and appearance.
    • Exhibits friendly and positive attitude towards guests and team members.
    • Exhibits emotional control under pressure
    • Extensive knowledge of the kitchen, its services, facilities and equipment.
    • Must possess basic computer skills.
    • Previous exposure to hot and cold food preparation as well as some Garde Manger & pastry experience.
    • Must be able to teach, develop and motivate culinary team
    • Demonstrates proactive leadership qualities.
    • Ability to work independently, meet deadlines and handle multiple duties.
    • Ability to work safely and in accordance with Safety Guidelines.
    • Ability to work in an unsupervised capacity and motivate team
    • Requires good communication skills, both verbal and written.
