PURPOSE:

To establish an in-house pastry program supplying the entire property with a high quality product. Pastry Line Cook III will assist the Senior Pastry Chef with daily production in all aspects of the bakery department including inventory, costs analysis and quality standards. To co-create signature items showcasing each of our clubhouses individuality. The Pastry Line Cook III will assist in he creation of Desert Mountain's standard pastry recipes to endure consistency.

ESSENTIAL DUTIES:

Responsible for startup of kitchen Equipment

Responsible for organization and production of daily pastry orders, special requests and production

Assists Chefs as directed

Responsible for quality inspection, proper breakdown and storage of products

Baking of breads for each restaurant

Dessert pars and garnishes

Ice cream, sorbets, frozen yogurts as needed

Overall cleanliness of bakery area

Daily baking of breakfast breads

Planning of desserts for large functions

Specialty cakes and pies

Monthly inventory

Pastry Orders/FoodTrack

Pastry costing

Pastry Financials

BEO Tracking

Providing excellent recipes

Innovation and co-creation of Seasonal Dessert menus

Other responsibilities as directed by the Chef

EDUCATION REQUIREMENTS OR EQUIVALENT:

Food handlers card required, Culinary degree

SPECIALIZED KNOWLEDGE:

Advanced baking skills, advanced pastry skills, Microsoft excel and word knowledge

PREVIOUS EXPERIENCE REQUIRED:

Three years experience in refined culinary environment with pastry experience

WORKING KNOWLEDGE TO BE ACQUIRED ON THE JOB:

Desert Mountain recipes, daily production schedules, wedding cakes

UNUSUAL PHYSICAL REQUIREMENTS AND WORKING CONDITIONS:

Lifting up to 50 lbs, bending, long hours on feet standing, hot work environment
