Mercato & Deli Manager Reports to:
Director of Food & Beverage
Position Overview:
The Mercato & Deli Manager will provide hands-on strategic direction, leadership, and support for the day-to-day operations of our Italian inspired retail market, Europa Table culinary club tasting experience, and hot and cold deli line including fresh made pastas, seasonal entrees, gourmet pizza, and assorted desserts and gelato. By aligning with our core values, strategic goals and objectives, this individual will work closely with direct reports and other department heads, managers, and supervisors across the property. This is a highly dynamic role that will manage and support the staff of 10-12 sales associates.
This is an exempt position with a company that operates 24 hours per day, 7 days a week, and 365 days a year. A successful candidate must be available and willing to work and respond to calls on a needed basis outside of regular business hours, including but not limited to, nights, weekends, and holidays.

Possess a proven leadership ability to build, motivate, train, and maintain staff, while possessing a working knowledge of personnel reports, margin reports, weekly sales numbers, and financial goals.
Food Handler and Responsible Beverage Service Certifications required.
Must be able to lift/carry products and packages weighing up to 50 lbs. regularly.
Responsibilities Specific to Mercato & Deli Manager:
Meticulously maintains presentation standards of facility, products, and personnel to ensure execution of service is achieved at the highest level.
Meets regularly with the Retail Director, the Food and Beverage Director, and General Manager to continuously evaluate strategies and ideas for enhancements to benefit the guest experience.
Reviews scheduling and labor needs to meet guests' needs while maximizing efficiency.
Ensures training programs are implemented and measured regularly.
Partner with the Retail Director in merchandising the market for maximum productivity and profit.
Responsible for inventory controls, product quality, and supervision of the Mercato and Deli team.
Coordinate production, merchandising, and sales through planning, direction, goal setting, communication, and teamwork.
Hiring, teaching, training, developing, and coaching the Mercato and Deli team.
Transport, store, unload, label, and stock market deliveries.
Ensure the execution of all company, County, and State health, safety, and sanitation guidelines/regulations, and confirm that all team members are aware of and are following these procedures at all times.
Write, update, and communicate policies and procedures for department.
Personally operate, clean and ensure all equipment is maintained in a safe working condition.
Train others on the safe and proper operation, cleaning, and maintenance of all deli equipment.
Perform other related duties as assigned.
