The Opportunity
We are seeking a disciplined, high-caliber Executive Sous Chef to join the leadership team of one of the most prestigious Chinese culinary destinations in the United States. Located in the heart of Las Vegas, the kitchen is a high-volume, fast-paced environment where traditional artistry meets modern luxury.

Key Responsibilities
Technical Execution: Lead the line during peak hours, ensuring every dish meets exacting standards of flavor, temperature, and presentation.
Operational Leadership: Manage back-of-house operations, including labor costs, inventory, and procurement, while maintaining a seamless flow between the kitchen and front-of-house.
Culinary Mentorship: Train and develop a large brigade of cooks in traditional Chinese techniques, ensuring consistency across all stations (Wok, Dim Sum, BBQ, and Prep).
Quality Control: Maintain rigorous standards for food safety, sanitation, and ingredient sourcing to uphold our reputation as a top-tier national dining destination.
Strategic Growth: Partner with the Executive Chef to refine menus and optimize kitchen workflows to support our rapid growth and high-volume demands.
Required Skills & Qualifications
Mastery of Chinese Cuisine: A profound understanding of regional Chinese flavor profiles, ingredients, and traditional philosophy.
Superior Technical Ability: Expert-level skills in wok hei, precision knife work, and traditional Chinese cooking methods.
High-Volume Experience: Proven success in a fast-paced, high-pressure environment (e.g., Las Vegas Strip, major metropolitan flagship restaurants).
Leadership Presence: Minimum of 3–5 years in a senior kitchen management role (Sous Chef or above) with a track record of leading diverse teams.
Operational Acumen: Strong grasp of P&L management, inventory software, and kitchen logistics.
