    Executive Asian Chef – Sushi & Hot Kitchen

    We are looking for a highly experienced Executive Asian Chef with strong expertise in sushi, omakase, and hot Asian cuisine to lead our kitchen.

    This position requires a chef who is comfortable running both the sushi bar and the hot kitchen, someone who understands fish quality, omakase execution, and also has strong experience with wok cooking, noodles, rice dishes, and Asian appetizers.

    This is a leadership position responsible for the entire kitchen and culinary team. We are looking for a chef who is hands-on, disciplined, passionate about Asian cuisine, and driven by results and consistency.

    Responsibilities

    Kitchen Leadership

    • Take full responsibility for the entire kitchen operation • Lead and manage the culinary team including sushi chefs, line cooks, prep cooks, and stewards • Maintain a professional, organized, and efficient kitchen environment

    Sushi & Omakase

    • Lead the sushi program and omakase experience • Maintain high standards for fish quality, cutting techniques, and presentation • Create nigiri, sashimi, specialty rolls, and seasonal offerings

    Hot Asian Kitchen

    • Oversee production of wok dishes, noodles, fried rice, stir-fries, robata and Asian appetizers • Ensure strong technique, speed, and consistency from the hot line • Develop dishes that are authentic while still creative

    Menu Development

    • Create and refine Asian menus that align with the restaurant’s concept • Test and develop new dishes and specials • Maintain strong flavor, balance, and presentation in every dish

    Quality & Food Safety

    • Ensure all dishes meet high standards for taste, quality, and presentation • Maintain strict food safety and sanitation practices • Keep the kitchen clean, organized, and disciplined

    Cost Control & Purchasing

    • Monitor food cost and labor cost • Manage ordering, inventory, and proper product storage • Maintain relationships with vendors to ensure quality ingredients

    Qualifications

    • Extensive experience in Asian cuisine and sushi preparation • Strong background in omakase and sushi bar leadership • Experience managing both sushi and hot Asian kitchen operations • Previous Executive Chef or Head Chef experience preferred • Culinary school training preferred but not required • ServSafe or Food Handler certification • Strong leadership and team management skills • Ability to perform in a fast-paced restaurant environment • Passion for quality ingredients, technique, and hospitality
