Job Title: Fabrication (Fab) Technician
Department: Production / Operations Location: Comanche, Oklahoma Reports To: Fabrication Supervisor or Plant Manager
Job Summary:
The Fabrication Technician is responsible for the skilled cutting, deboning, and trimming of meat products in accordance with company specifications and safety standards. This role plays a critical part in maintaining product quality and consistency while maximizing yield and minimizing waste in the meat processing plant.
Key Responsibilities:
Perform fabrication tasks such as cutting, deboning, and trimming of beef, pork, poultry, or other meat products.
Use knives, saws, and other hand or power tools safely and efficiently.
Ensure all cuts meet company specifications for size, weight, and appearance.
Maintain a clean and sanitary work area in accordance with USDA and company standards.
Identify and remove defective products or contaminants.
Follow Good Manufacturing Practices (GMPs), HACCP, and safety protocols at all times.
Operate within yield and productivity goals to reduce waste and increase efficiency.
Communicate effectively with coworkers and supervisors about production needs or concerns.
Perform daily equipment checks and report any mechanical issues.
Assist in training new or less-experienced employees as required.
Qualifications:
High school diploma or equivalent preferred.
Prior experience in meat cutting, fabrication, or food processing environment strongly preferred.
Ability to use knives and cutting tools with speed and precision.
Knowledge of meat cuts and processing techniques preferred.
Physical ability to stand for long periods, lift up to 50 lbs, and work in cold environments.
Strong attention to detail and commitment to safety and quality.
Willingness to work flexible hours, including early mornings, weekends, or overtime.
Working Conditions:
Cold, wet, and fast-paced production environment.
Frequent standing, lifting, bending, and repetitive hand movements.
Use of PPE (personal protective equipment) such as gloves, aprons, and safety glasses is required.
