  • Responsibilities

    Assist in overseeing the Restaurant, Pool and Beach operations, Room Service and Minibar outlets.

    Required Skills

    • Support the Food and Beverage Managers in training and developing Food and Beverage associates.

    • Ensure COMO corporate brand and standards are observed.

    • Support the oversight of compliance with health and safety regulations regarding food preparation and serving in dining facilities.

    • Assist the F&B Manager with administrative and back-office duties.

    • Assist the Restaurant & Bar Manager with upholding standard operating procedures, steps of services and other policies and procedures for the food and beverage operation

    • To ensure that all stocks and supplies are requested timely, correct stock levels maintained and stored under optimum conditions. Supervise the stock level of minibar.

    • To ensure that operating equipment is used properly.

    • To monitor and reduce breakages

    • Monitor up selling performance

    • To assist and participate in the preparation of the annual F&B budget with the F&B Manager

    • To conduct beverage stock weekly and assists in monthly inventory

    • To support efforts to control labor costs

    • Supervise and ensure 5-star service throughout all areas and in compliance with the LQA standards

    • Perform proper execution of opening and closing procedures, pre and post service duties (Pool and Restaurant)

    • Make sure that all employees are properly cashed out, there are no open checks in Micros,  and all cash is balanced and accounted for

    • Communicate with kitchen to update them of service issues (i.e., pace of service, VIP tables)

    • Maintain a high level of cleanliness in all F&B outlets

    • Assists F&B manager with pre-shift meetings

    • Review reservation sheet and seating plan and handle any special requests or VIPs

    • To conduct food and beverage stock takes regularly, support cost control and audits

    • Identify training needs and liaison with the Human Resources and the F&B Manager department for the F&B teams

    • Maintaining high staff morale and team spirit

    Required Experience

    • Associates degree or higher preferred
    • Solid computer knowledge, with a high degree of competency in Microsoft suite products; knowledge in Micros 3700 or 9700, Open table and HotSos also highly preferred.
    • 1-2 years fine dining/ upscale restaurant experience required in a restaurant management role.
    • 1-2 years prior supervisor experience preferred. 
    • Open availability to work nights, weekends and most major holidays.
    • Genuine and warm hospitality skills.
    • Energetic and dynamic personality.
    • Excellent organizational skills.
    • The ability to lead, manage and train staff.
    • Excellent written and verbal communication skills.
    • Attention to detail.
    • The ability to work well under pressure.
    • Strong knowledge and understanding of daily restaurant accounting procedures.
    • Requires standing for extended periods, walking, pushing, kneeling or crouching.
    • Requires working outside with exposure to external climatic elements such as sun, rain, wind etc.
    • Must be able to reach overhead and below the knees; including bending, twisting, pulling, and stooping.
    • Able to move, lift, carry, push, pull, and place objects weighing less than or equal to 30 pounds without assistance.
