  • Responsibilities

    SUMMARY: To prepare food in accordance with resident diet specifications, center procedures, and prescribed dietary and sanitary regulations under the supervision of the Director of Culinary Services. ESSENTIAL DUTIES AND RESPONSIBILITIES:

    • Assist the Director of Culinary Services and/or Dietitian to direct activities of the Culinary Assistants, review and process diet changes and ensure menus are maintained in accordance with established procedures, coordinate culinary services with other departments, and review menus prior to preparation of food.
    • Ensure that food and supplies are available for the next meal.
    • Assist in inventorying and storing incoming foods and supplies.
    • Report any hazardous conditions, equipment, accidents, and incidents.
    • Utilize a hazard analysis and critical control points (HACCP) approach to prevent biological, chemical, and physical hazards in production processes and reduce these risks to a safe level.
    • Practice universal precautions at all times and adhere to safety rules and regulations.
    • Prepare and serve meals in accordance with planned menus, diet plans, portion control procedures, and center policies.
    • Direct and assist in cleaning work areas, equipment and floors, and dishes and utensils.
    • Distribute menus and check all trays for menu and diet preferences and accuracy.
    • Ensure proper storage of foods and supplies; adhere to universal precautions and sanitary, safety, and infection control policies and procedures.
    • Ensure food is prepared according to center diet and textures and federal policy and procedures.
    • Attend orientation and in-service as required by the state and company.
    • Assist with inventory control.

    Required Skills

    PHYSICAL DEMANDS AND ENVIRONMENT:

    • Frequent walking, reaching, climbing, bending, lifting, grasping, fine hand coordination, pushing, and pulling.
    • Must be capable of performing the Essential Job Functions of this position with or without reasonable accommodation.
    • Must be able to relate positively and favorably to residents, families, and outside agencies and to work cooperatively with other associates.
    • Ability to present to groups.
    • Ability to remain calm and under stress.
    • Ability to communicate with local staff, remote staff, and outside agencies. OTHER REQUIREMENTS:
    • ServSafe certification preferred.
    • Understand, comply with, and promote rules regarding resident''s rights.
    • Maintain confidentiality in accordance with HIPAA guidelines.
    • Maintain an orderly, confidential, and safe work environment.
    • Adhere to all Company and departmental policies and procedures.
    • Attend and participate in training and in-service education.
    • Assist in orientation and training other staff.
    • Perform other duties as assigned.

    Required Experience

    QUALIFICATIONS:

    • Must be at least 18 years of age.
    • Must have the ability to read, write, and follow oral and written directions at a level to accomplish the job.
    • Must be capable of maintaining regular attendance as required.
    • Must meet all local health regulations and pass post-employment physical exam, if required.
    • Must be able to direct Culinary Assistants.
    • Must be able to work weekends and holidays as directed by the Director of Culinary Services.
    • ServSafe Certification preferred.
