Shortened holiday hours
As the Lead Cook at Drakes, you will directs daily food productions and supervises preparation of meals according to sanitary and safety regulations. Suggest menu, recipe, or production changes. Is responsible for maintaining high standards of quality food preparation, utilizes portion control and standardized recipes and assists in evaluating appropriate quantities of food needed.
Supervises and directs staff in food production methods and standards maintains a positive work atmosphere and environment for all staff, serves as role model and influences Country Manor Hometown mission and philosophy.
Prepares food in accordance with menus that is attractive, palatable, and prepared within established guidelines of the facility and Minnesota Department of Health.
Responsible for adequate sanitation of food preparation area (including but not limited to; sinks, garbage, storeroom, cooler/freezer) and equipment (including but not limited to; grill, stove, ovens, steamer, steam table). Completes daily temperature check on coolers/freezer.
Prepares and directs preparation of all food indicated on menu; ensures all amounts of food are utilized using standardized recipes, follows daily production schedule, utilizes, and properly rotates any overproduction of food items, reports production changes needed, labels and dates products per guidelines and properly cools/re-heats foods.
Prepares food creatively without jeopardizing the nutrient value but enhancing presentation. Prepares and makes changes for modified diets according to the written menu.
Tests new recipes and reports results to Chef for developing recipes and tastes food daily before serving to ensure correct taste.
Prepares and serves food according to correct portion control of product by weight or measure.
Promotes a safe work habit and environment at all times.
Monitors foods for freshness and expiration dates.
Completes all other duties assigned.
Must have at least 1 year of cooking experience.
Knowledge of federal and state regulation compliance.
Must show potential to determine and direct needs without hesitation.
Understand proper methods and cooking temperatures for best utilizations and yield of meats and other foods to promote quality.
Maintains proper operations and cleaning/sanitixing of equipments and work area.
Must have a comprehensive knowledge of food production, weight/measures, and recipe calculations.
Accurate and neat work with attention to detail.
Must be servsafe certified.
