A high-end Japanese restaurant located in Vail, Colorado is seeking an experienced Head Sushi Chef.
Position Overview
This position will be responsible for overseeing the entire sushi department as the Head Sushi Chef of an upscale Japanese restaurant.
The role includes managing overall sushi bar operations, maintaining the quality of sushi and omakase offerings, developing menus, training and managing team members, controlling food and labor costs, and delivering the highest level of guest experience.
Key Responsibilities
Sushi Bar Operations
Manage daily sushi bar operations.
Maintain consistency in quality, taste, and presentation.
Ensure proper handling, storage, and sanitation of fresh seafood.
Menu Development
Develop seasonal omakase and sushi menus.
Propose new techniques, premium ingredients, and creative menu ideas.
Bring modern ideas while respecting traditional Japanese culinary techniques.
Team Management
Hire, train, develop, and manage sushi chefs and kitchen staff.
Lead and manage the sushi team.
Monitor team performance and maintain operational standards.
Create a positive and professional work environment.
Inventory & Cost Control
Manage ordering and inventory control.
Coordinate with suppliers and vendors.
Manage food cost and labor cost.
Reduce waste and improve operational efficiency.
Food Safety
Maintain sanitation standards in accordance with HACCP guidelines.
Ensure compliance with food safety standards.
Maintain a clean, organized, and safe kitchen environment.
Qualifications
7–10+ years of professional sushi chef experience.
3+ years of experience as a Head Chef, Lead Sushi Chef, or similar leadership role.
Strong knowledge of authentic sushi techniques and knife skills.
Deep understanding of Japanese cuisine and Japanese ingredients.
Experience with omakase service.
High-end restaurant experience preferred.
Knowledge of U.S. food safety regulations.
Team management experience.
Must be legally authorized to work in the United States.
Preferred Qualifications
Graduate of a Japanese culinary school or related certification.
Bilingual ability in Japanese and English.
Experience in Michelin-recognized restaurants, upscale Japanese restaurants, or fine dining establishments.
