    JOB SUMMARY

    Act as an assistant to the Head Hibachi Chef. Prepare and cook food and perform a live, entertaining cooking show in front of guests.

    ESSENTIAL FUNCTIONS

    Prepare and cook food at hibachi tables in the dining room and in front of guests.

    Ensure Company recipes are made to specification.

    Prepare food to Company specification.

    Maintain proper par levels of food.

    Maintain proper rotation of food.

    Ensure that meat yield sheets are completed daily.

    Assist in scheduling other chefs.

    Assist Head Hibachi Chef with the recruitment of new chefs.

    Assist Head Hibachi Chef in the training and development of new chefs.

    Coach new and current chefs.

    Meet budgeted food cost.

    Meet budgeted labor cost.

    Responsible for achieving and maintaining an “A” from health department.

    Responsible for the completion of the New York City Food handler’s Certification within one month of being hired. (for NY Employees Only).

    RESPONSIBILITIES/DUTIES (Other duties may be assigned as required by business needs)

    Receive and store products.

    Ensure kitchen cleanliness at all times.

    Assist with annual performance review of chefs alongside the General Manager and Head Hibachi Chef.

    Attend department head meetings.

    Work with Head Hibachi Chef to ensure compliance and accountability of Company processes and procedures in the delivery of superior customer service.

    EDUCATION and/or EXPERIENCE

    High School Diploma or equivalent preferred.

    Experience preferred performing a live cooking show in front of guests.

    WORKING CONDITION & PHYSICAL EFFORT

    The work environment can be loud and busy. The position requires live performance in front of guests while preparing food. There are many hazards such as hot surfaces and liquids, sharp knives, and slippery floors. Work is normally performed in a restaurant/catering work environment in front of a live audience of guests. High stress and fast-paced environment. The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job. While performing the duties of this job, the employee is regularly required to stand for long periods as well as walk, bend and stoop. The position requires working taste buds, ability to smell, feel with fingers and visually inspects, including close and distance vision. The position requires ability to use arms, hands and manipulate fingers to reach, stir, measure, pour, cut, chop, dice, decorate, etc.

    SUPERVISORY RESPONSIBILITY

    This job has responsibilities relating to managing, coaching and training other hibachi chefs.

    POSITION TYPE/EXPECTED WORK SCHEDULE

    This position regularly requires long hours and weekend work. Work days will fluctuate to accommodate needs of restaurant.
