    JOB DESCRIPTION

    Summary/Objective

    The Cook takes pride in preparing and serving Irish 31’s menu. They know that in order to do this, they need a clean and organized work area. They prepare and/or direct the preparation of food to be served, complying with all applicable sanitation, health and personal hygiene standards and following established food production programs and procedures. They consistently following the proper recipes and adhere to high standards regarding food preparation, appropriate use of facility supplies and equipment to minimize loss, waste and fraud, cleaning and sanitation, teamwork and customer service. They also help to ensure that our guests' customer experience is always the best it can be. Responsibilities require you to be on your feet working while clocked in, unless on break. If you are not busy, you are expected to take on tasks you see that need to be completed as well as pitch in to help teammates when needed.

    Essential Functions

    Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions.

    Prepares or directs preparation of food served using established production procedures and systems.

    Determines amount and type of food and supplies required using production systems.

    Ensures availability of supplies and food or approved substitutions in adequate time for preparation.

    Sets steam table; serves or ensures proper serving of food for tray line or dining room.

    Complies with established sanitation standards, personal hygiene and health standards. Observes proper food preparation and handling techniques and safety while prepping and cooking food.

    Stores food properly and safely, marking the date and item.

    Reports necessary equipment repair and maintenance to supervisor.

    Food prep.

    Following recipe directions and maintaining food processes such as:

    Cooking.

    Marinating.

    Seasoning.

    Chopping herbs

    Dicing, cutting, and slicing vegetables.

    Completing hot and cold food preparation assignment accurately, neatly, and in a timely manner.

    Preparing food throughout the day with anticipation to customer volume.

    Correctly prepares all food served following standard recipes and special diet orders.

    Plans food production to coordinate with meal serving times so that excellence, quality, temperature and appearance of food are preserved.

    Prepping food with adherence to proper procedures for use the following day.

    Maintaining appropriate food apportions for serving.

    Monitoring food levels on the line.

    Maintains daily production records as well as any required BOH paperwork.

    Keeps work area neat and clean at all times; cleans and maintains equipment used in food preparation.

    Completes food temperature checks before service.

    Responsible for all dishwasher duties if needed.

    Adhering to policy productivity (keeping busy at all times).

    Passing required training and tests.

    Ensures that guests have an exceptional customer experience by having a friendly and professional attitude to ensure quality customer service through awareness of service and effective communication with management and staff.

    Must get along with coworkers.

    Must maintain a positive and professional attitude at all times.

    Must adhere to all policies and procedures stated in the Irish 31 Orientation.

    Must stay busy when on the clock.

    Zero tolerance for any kind of theft.

    Examples:

    Giving away drinks, food, and any other product to peers or guests, or taking said items without paying for them

    Waste

    Over portioning

    Drinking on the job

    Eating chips or fries out of the chip bowl.

    Eating on the line

    Eating anything that has not been rung in properly (sauces included) or eating “dead” food.

    Not adhering to the Irish 31 employee meal procedures

    Side work, always cleaning, wiping stuff down, never standing in one spot for too long or leaning.

    No horseplay or violence, including verbal threats, will be tolerated.

    No arguing

    Handling all equipment with care

    Following all safety and sanitation procedures in accordance with The Irish31 Safety and Sanitation manual, Irish orientation, and state health code

    Labeling anything that is perishable.

    No personal items permitted in coolers, sever stations, kitchen areas, or stored behind the bar

    No cooks are permitted behind the bar.

    Cooks may only be in the front of the house to clock in or use the restroom.

    Must “keep it 31.”

    Professionalism with guests. Not “talking shop” with guests, sharing any Irish 31 private information, or talking to them about other team members or members of management.

    Maintain a professional demeanor with guests or peers on topics that can cause issues (i.e., politics, religion, etc.).

    Must have clear and professional communication and be able to read, speak, and comprehend English.

    Responsible for daily deep cleaning duties, regular cleaning duties, and any additional cleaning set by Irish 31 or management.

    Supervisory Responsibility

    This position has no supervisory responsibilities.

    Work Environment

    This job operates in a kitchen environment, housed with equipment such as an oven, stove, dishwasher, slicer, coffee machine, steamer, mixer and chef’s knives. The employee is frequently exposed to heat, steam, fire and noise.

    Physical Demands

    The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job. The employee is occasionally required to sit, stand, reach, lift, bend, kneel, stoop, climb, push and pull items weighing 50 pounds or less. The position requires manual dexterity; auditory and visual skills; and the ability to follow written and oral instructions and procedures.

    Position Type/Expected Hours of Work

    This is a part-time or full-time position. Days and hours of work may vary based on need. Frequent evening and weekend work is required.

    Travel

    No travel is expected for this position. Though, you must have a reliable form of transportation and/or a reliable source of transportation to successfully meet the demands and timeframe of scheduled shift(s) and must always be on time.

    Reporting and resolving discrimination and harassment concerns

    Illegal Harassment and discrimination cannot be eliminated without the help of every employee; it is everyone’s responsibility. If an employee believes they are being illegally discriminated against or harassed, the employee should tell the person who is harassing or discriminating against them what behavior they want to stop and why. Open door policy

    All Corporate, GM’s, and/or Managers maintain an “open door” policy to listen to employee concerns about potential illegal discrimination and harassment. Employees may bring these concerns up at any time.

    No retaliation

    Employees have the right to complain of illegal discrimination and harassment without retaliation. As long as employees act in good faith (for instance, by telling the whole truth to the best of the employee’s knowledge and cooperating with any investigations), no adverse employment action will be taken against the employee for complaining about illegal discrimination or harassment. If an employee feels they are being improperly retaliated against, report it following the same procedures he or she would follow to complain of illegal discrimination or harassment. Remember, just as the employee has a right to bring these matters up, employees also have a responsibility to do so; if the employee does not bring them up they cannot be addressed. Because we prohibit retaliation, there is never a good excuse for failing to report discrimination or harassment. When a complaint is made

    If a complaint about potential illegal discrimination, harassment or retaliation is made, the Irish 31 Live will promptly investigate the complaint. Investigations will be done with due respect for all involved. All employees are required to cooperate in investigations including by telling the whole truth to the best of their knowledge, attending interviews with investigators appointed by the Irish 31 Live, providing all information (including any physical items such as documents or notes) they may have, and maintaining confidentiality. The obligation to cooperate extends to both persons making a complaint and to anyone else the Irish 31 Live feels may have information relevant to an investigation. If an investigation results in a finding that the Irish 31 Live’s policies forbidding illegal discrimination and harassment have been violated, the Irish 31 Live will take action intended to prevent any further violations.

    Prepare food with proper safety equipment, tools, and recipe specs with further direction from management

    Knowing the food hierarchy with regard to the storage of products in the walk-in freezer.

    Keep dry storage organized.

    Constantly and accurately uses prep sheets, recipe cards, playbooks, cleanliness list, and station checklist.

    Follows sanitation standards when washing cookware and utensils throughout the day.

    Thoroughly clean equipment in a timely manner as assigned throughout the day in accordance with sanitation guidelines.

    Prepare fresh, delicious food that also looks great.

    Utilize online access to fulfill scheduling and HR needs.

    It is your responsibility to report all unauthorized actions such as but not limited to stealing, drinking on and/or before shift, giving away and/or discounting drinks, food/merchandise. Failure to report witnessed unauthorized actions will result in disciplinary action up to and including termination.
