Job Summary The Lead Line Cook supports kitchen leadership in delivering an exceptional, high-volume dinner service. This hands-on role leads by example, ensuring dishes are prepared with precision, consistency, and urgency while keeping the line organized and supporting the culinary team.
Key Responsibilities
● Set up, inspect, and stock stations before service. ● Prepare menu items according to The Americano’s recipes, presentation standards, and quality expectations. ● Help coordinate the line, maintaining clear communication, ticket timing, and urgency. ● Train and support line cooks while reinforcing kitchen standards. ● Monitor food quality, portions, temperatures, seasoning, and presentation. ● Communicate effectively with chefs, kitchen staff, and the front-of-house team. ● Assist other stations as needed to maintain smooth service. ● Oversee evening breakdown, food storage, labeling, sanitation, and deep cleaning. ● Assist with prep, inventory, product rotation, receiving, and waste reduction. ● Follow and reinforce all food-safety, hygiene, sanitation, and workplace-safety requirements. ● Report equipment issues, shortages, and quality concerns to kitchen leadership.
Skills & Qualifications
● Two or more years of professional line-cook experience; leadership or upscale, high-volume dining experience is preferred. ● Strong knife skills and knowledge of grilling, sautéing, roasting, frying, and other cooking techniques. ● Ability to manage multiple tickets accurately during peak dinner service. ● Strong communication, organization, and problem-solving skills. ● Ability to coach teammates professionally and lead by example. ● Knowledge of food safety, allergen awareness, and proper food storage. ● Must have or obtain a current Arizona Food Handler Card. ● Available for evenings, late shifts, weekends, and holidays. ● Able to lift up to 50 pounds and work on your feet for extended periods.
