    Ponzu Sushi is a casual fine-dining Japanese restaurant in downtown Palm Springs focused on precision, consistency, and a high standard of execution. We are seeking disciplined, detail-oriented line cooks who take pride in their craft and want to be part of a focused, growing kitchen.

    This is not an entry-level role. We are looking for cooks who understand urgency, respect the structure of a professional kitchen, and can execute at a high level under pressure.

    Responsibilities

    Execute dishes with consistency, accuracy, and attention to detail

    Maintain a clean, organized, and disciplined station at all times

    Work with urgency while maintaining composure during high-volume service

    Follow all food safety, sanitation, and kitchen standards without exception

    Assist with prep, station setup, and breakdown with efficiency and care

    Qualifications

    Proven experience working a line in a fast-paced, professional kitchen

    Strong understanding of kitchen systems, timing, and communication

    High standards for cleanliness, organization, and personal accountability

    Ability to take direction, accept feedback, and continuously improve

    Interest in or respect for Japanese cuisine and technique

    Schedule & Compensation

    Full-time position (5 days per week)

    Typical hours:

    Weekdays: 11:30 AM – approximately 10:30 PM

    Weekends: 11:30 AM – approximately 11:00 PM

    Includes a 1-hour break each shift

    Tipped position with overtime potential, offering strong earning potential for the right candidate
