San Francisco’s sensational ramen restaurant, Marufuku Ramen, will be opening its first restaurant in Austin. The new restaurant will be in the popular Muller Neighborhood. Marufuku focus on Hakata-style tonkotsu ramen served with varying spice levels. The menu includes rice bowls, gyoza, karrage, takoyaki, and steamed buns among other delicious items.
We are looking to hire three key positions for the new restaurant: Restaurant Manager, Kitchen Manager and Assistant Kitchen Manager.Kitchen Manager Job Description:
We are looking for an experienced Kitchen Manager to manage the kitchen team to prepare delicious meals according to our menu, deliver such meals in a timely fashion, and perform cleaning tasks to ensure the kitchen remains efficient in creating and delivering dishes for customers. Ramen preparation and Japanese restaurant experience are a plus.
Reports Directly to Restaurant Manager
Requirements:
Ensure weekly staffing schedules for the kitchen meets the needs of the restaurant based on customer traffic. Supervise the work of employees in the kitchen and bar, and perform activities such as scheduling work, holding staff meetings, participating in employee evaluations with the Restaurant Manager, and executing other managerial roles.
Manage the inventory of all food and alcoholic and non-alcoholic beverages. Monitor food supplies and food deliveries from vendors.
Keep track of ingredient inventory and collaborate with other kitchen and management staff to ensure inventory levels are consistently maintained.
Train and coach kitchen team on all Marufuku food standards and procedures.
Hire, train, retain and evaluate the kitchen staff based on their roles & responsibilities.
Review workstation set up to ensure all needed ingredients and cooking equipment are in place in an efficient and safe manner.
Ensure meal preparation (preparing ingredients and cooking) is done to Marufuku standards of quality of product, efficiency, safety, and inventory management.
Ensure workstations set up complies with Marufuku standards, with all needed ingredients and cooking equipment.
Manage the inventory of all food and all alcoholic and non-alcoholic beverages.

Monitor all safety and sanitation practices of food and beverage storage, presentation, and service; ensure that Marufuku standards and policies are met, and the kitchen is run in an orderly and professional manner.
Manage storage conditions for optimal preservation of food and beverages. Ensure food and beverage is of the highest quality per Marufuku standards.
Grow and maintain a strong working relationship with the Restaurant Manager, Assistant Kitchen Manager, kitchen staff, and all employees of the restaurant as well as our customers and vendors.
Strong financial knowledge in all food beverage areas including food costs, cooking supplies, other product costs, and labor costs.
Responsible for seeing those daily assignments and all work is completed ensuring orderly and organized work areas, clean work areas, and fully stocked work areas.
Due to staffing demands and other instances of operational necessity, you may be asked to perform different functions and you will be expected to help others as necessary.
Adhere to Marufuku standards of operations, policies, procedures, manuals, memos, etc., all of which are essential functions of the job.
Hold and attend staff meetings as necessary.
Adhere to all relevant nutrition and health department regulations and standards
Ensure all food is prepared according to health department requirements.
Point of contact with Health Department with respect to heath permit inspections and compliance
Minimum Qualifications:
Minimum of 3+ years current experience as a Kitchen Manager in a high-volume concept
Permit management as needed including Health Department permits.
Computer literacy preferred/Spreadsheet knowledge preferred.
Good communication skills and ability to be a strong leader.

Physical Requirements:
Standing, walking, exposure to temperature changes, dust, fumes, or gases, climbing/ladders, squatting/kneeling, reaching, grasping, pushing/pulling, twisting/bending, lifting/carrying/pushing/pulling including items weighing more than 50 pounds on occasion.
Attendance Requirements for this position: Additional hours are required to meet deadlines of the position, including weekends and/or holidays. Job Type: Full-timeSalary: $40,000 - $60,000 per year
