    Job Summary

    We are seeking a Masa/Tortilla Production Cook to join the team at Escuela! In this position, you will be responsible for using high-quality dry corn to nixtamalize and grind in house for delicious and fragrant masa. The ideal candidate is experienced, attentive, and has extensive knowledge of making masa. If you have a passion for nixtamalization and masa production, we want to hear from you!

    Duties and Responsibilities:

    Nixtamalizing Corn

    Grinding corn using/properly cleaning a molanito

    Experience with masa roller/corn tortilla machine2

    Flour Tortilla production

    Set up the kitchen with necessary tools and equipment

    Maintain appropriate levels of inventory

    Participate in daily kitchen opening/clean up

    Performs other duties as assigned by our chef team

    Qualifications:

    Previous experience in Masa Production is preferred

    Ability to use professional-grade kitchen appliances and equipment

    Advanced knowledge of cooking techniques and recipes

    Strong organizational and time-management skills

    Knowledge of food safety practices

    Available for early morning shifts

    Open to feedback and the ability to utilize it as a tool

    Ability to meet the physical demands of the position, including standing for long periods and lifting up to 40 pounds
