    THE BIG PICTURE

    The Prep Cook reports to the Kitchen Manager and is responsible for accurately and efficiently preparing all line items to the specifications set forth in the Modern Times Beer recipe guidelines. This role also oversees kitchen inventory, daily prep of ingredients, receiving, rotating, and storing orders. Candidates must share Modern Times' commitments to quality, safety, business ethics, and continuous innovation.

    THE EVERYDAY VIEW

    • Complete prep list following all specs and prepare vegan dishes consistently according to recipe, including but not limited to portioning, chopping, storing, peeling, weighing, measuring, rinsing, and mixing ingredients

    • Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist

    • Operate ovens, stoves, grills, microwaves, and fryers

    • Test foods to determine if they have been cooked sufficiently

    • Efficiently run your station during the shift

    • Setup and break down work station

    • Wash and disinfect kitchen area, dishes, tables, tools, knives, and equipment

    • Maintain inventory of produce and ingredients

    • Inventory ingredients and produce daily, monthly, and upon request

    • Order and receive all produce and ingredients

    • Manage kitchen supplies and overall kitchen cleanliness 

    • Coordinate with kitchen team to identifying ordering and prep needs specific to particular events

    • Keep team abreast of any kitchen needs, including broken or new equipment needs 

    • Work closely with team to make sure all kitchen logistics are covered for upcoming events and anything returning from events is properly inventoried, labeled, restocked or discarded

    • Approach all guest and employee encounters in an attentive, friendly, courteous and service-oriented manner

    • Responsible for food safety and food quality within the kitchen

    • Follow food handling and sanitization standards

    • Ensure work station is clean and organized at all times

    • Sort and remove trash and garbage to dumpster

    • Clean, sanitize, and stock all china, glassware, silverware, flatware, pots and pans

    • Change dish machine chemicals, water, and compartment sink as needed, while inspecting and verifying machine is working properly and chemical levels are correct throughout the work day

    • Ensure uniform and personal appearance are clean and professional

    • Have clear knowledge of all products offered by Modern Times 

    • Be a team player and able to interact with all levels within the organization 

    • Adhere to and enforce all applicable local, state and federal laws, rules, and regulations 

    • Other tasks as needed

    TRAVEL REQUIREMENTS

    •  Up to 15% travel time may be required

     

    DESIRED SKILLS AND EXPERIENCE

    • Must be 21 years of age or older at the time of application
    • Able to pass a post-offer, pre-employment background check 
    • Must have a minimum of 3 years' kitchen experience
    • California Food Handler Certification required
    • Graduate of a culinary institute, military school or formal on-the-job training preferred
    • Knowledge of event catering operations
    • Must have a trained palate with the ability to anticipate seasonal changes in produce and recipe variations based on produce yield and seasonality
    • Effective verbal and written communication skills
    • Must be comfortable working in a team environment
    • Able to quickly assess and prioritize needs
    • Strong interpersonal skills and a love for meeting and interacting with people
    • Thorough attention to detail and desire to take initiative
    • Must adhere to company's policies and procedures
    • The desire to work in a fast-paced, growing company

     

    PHYSICAL AND MENTAL REQUIREMENTS

    • Night, weekend, and holiday availability required

    • Personal Protective Equipment (PPE) may be required when performing work duties  

    • Able to stand, walk, and be on your feet for prolonged periods

    • Able to read and follow written English instructions

    • Able to regularly twist, turn, kneel, climb, stoop, bend, crawl, lift and carry supplies and equipment weighing up to 55 pounds using appropriate techniques and tools

    • Able to safely navigate the small areas and crowded spaces

    • Able to maneuver packages of any weight above 75 pounds with appropriate equipment and/or assistance 

    • Abe to move 165-pounds, using appropriate techniques and tools 

    • Able to both work and thrive in a high-stress environment that has a quiet to moderate noise level

    • Able to read and follow written English instructions

    • Able to safely navigate the tasting room and snack bar areas, including crowded spaces

    • Able to work in a factory/production environment which may be loud, slick, humid, cold, and hot

    • Able to work in indoor and outdoor environments with moderate noise and occasionally slippery floors

    • Able to comply with and enforce all health, safety, and personal hygiene policies and standards

    ABOUT MODERN TIMES

    Modern Times began as a 30bbl production brewery in the Point Loma neighborhood of San Diego. Modern Times is named after a beautifully crazy utopian community founded in 1850, and many of our beers are named after real utopian experiments or mythological utopias. Today, we're distributed throughout California, Nevada, Arizona, Maui, the Pacific Northwest and select international markets. We operate a tasting room at the brewery, as well as in San Diego's North Park community, and opened brewery/restaurant locations in Portland, Los Angeles, and Encinitas in 2018, Santa Barbara and Oakland in 2019, with a new California location in Anaheim in the coming year. We brewed our first batch on May 18th, 2013; our beer went on tap for the first time on June 24th 2013; we held the soft opening for the Lomaland Fermentorium tasting room on August 9th, 2013; and our Grand Opening was September 7th, 2013.
