Assistant Food and Beverage Manager
Position Summary:
The Assistant Food and Beverage Manager works closely with other F&B management to ensure staff are properly trained and equipped; food, beverage, and supplies are fully stocked; private parties and events are planned and executed professionally; and food and beverage operations run smoothly in general. The Assistant F&B Manager may manage cruises independently or with other F&B management and may be called upon to perform other duties as required.
Minimum Requirements:
High school diploma or equivalent
Must be at least 21 years old
Responsible Vendor Certification preferred
3 years fine-dining restaurant experience
Some management experience preferred
Banquet experience preferred
Ability to train employees in all aspects of service
Must be able to meet Coast Guard requirements in this work environment
Essential Duties and Responsibilities:
The essential functions include, but are not limited to the following:
Administrative Functions
Works with caterers and sales staff to create private party menus
Schedules training sessions with food and liquor reps
Conducts regular employee training sessions
Food Service Responsibilities
Verifies all service staff are present and properly attired and equipped
Assigns table sections to service staff
Coordinates food preparation with kitchen staff
Orders backup food from storage warehouse as needed
Inventories catered foods when necessary
Oversees banquet and buffet set-up
Greets all guests and verifies proper ticketing
Seats dinner guests and assigns server
Oversees dinner service to ensure smooth flow of service
Directs staff to ensure tables are maintained and reset efficiently
Checks food levels throughout service
Directs kitchen staff to prepare additional foods as needed
Closing Duties
Assigns staff closing duties
Oversees cleaning of dining room, buffets and service equipment, kitchens, cooler,dishwashing areas, restrooms, bars, etc
Oversees resetting of dining rooms including tablecloths, table settings, chairs, buffets
Prepares cashout reports and cashes out staff
Deposits closing cashout reports securely
Coordinates closing of vessel with marine crew
Prepare notes for day crew
Physical Requirements
Continuous standing and walking for more than 8 hours
Ability to lift/carry/push/pull 50 pounds
Ability to bend/stoop/reach/climb stairs
