  • Responsibilities

    OVERVIEW:

    Under the supervision of the Asst. GM and General Manager, the Food & Beverage Operations Manager is responsible for hiring and scheduling seasonal staff, ensuring quality control of our food product during tournaments and events, and purchasing of products for all events at the Pigeon Forge complex.  The Food & Beverage Operations Manager must be able to work a flexible schedule, have a positive, can-do attitude, and be able to motivate a diverse seasonal staff.

    Required Skills

    RESPONSIBILITIES:

    STAFFING

    • Recruit all seasonal concessions staff. Perform phone and in-person interviews for qualified candidates.   
    • Schedule staff for all events including, youth tournaments, spring training, camps, and special events held at the complex.
    • Ensure that all staff are properly trained and receive an orientation for their position.
    • Work with community partners and attend job fairs to recruit staff.
    • Engage with seasonal employees to quickly identify staffing and personnel needs.
    • Process timesheets for payroll.

     

    OPERATIONS

    • Provide quality control over products being served to our guests.
    • Ensure all service and food areas are clean.
    • Work with Concessions Leads to ensure that concession stands are operating efficiently.
    • Establish and monitor standard operating procedures for concessions.
    • Responsible for all aspects of inventory, purchasing, and internal and external invoicing.
    • Resolve customer complaints appropriately to maintain a high level of customer satisfaction and quality.
    • Maintain customer service excellence through consistent coaching and training
    • Perform daily walk-through to ensure full compliance with Health Department regulations.
    • Act as point person for point of sale system
    • Reconcile daily cash and credit receipts
    • Other duties as assigned.

     

     

     

    Required Experience

    QUALIFICATIONS:

    REQUIRED:

    • High school diploma
    • 3+ years supervisory experience in a hospitality setting
    • 5+ year’ work experience in a variety of capacities in food service operations
    • Willingness and ability to work long hours, evenings, and weekend, depending on the needs of the business including holidays.
    • Excellent customer service and organizational skills, with high regard to attention to detail

     

    PREFERRED:

    • Bachelor’s degree in Business Administration or Hospitality
    • Restaurant or stadium concessions experience

     

    WORKING CONDITIONS / SPECIAL PHYSICAL REQUIREMENTS:

    • Regular lifting of heavy items of 50 lbs. or more
    • Exposure to extreme heat
    • Standing, walking, and climbing stairs for long periods of time on a regular basis
