    POSITION OVERVIEW We are looking for an experienced Head of Pastry to join our production team in Maspeth, Queens. As the Head of Pastry at Ole & Steen you will oversee our daily production of a variety of cakes, pastries, and other sweet goods according to our traditional Danish recipes.

    The ideal candidate will be well-versed in culinary arts with a passion for sweet and delicious creations. You are an experienced leader and know how to build and motivate a team and thereby achieve and exceed goals and expectations. You must adhere to health and safety standards.

    The goal is to enhance customer satisfaction so that we can maintain and expand our clientele and you must expect to produce a high volume of products for our stores. This role is ideal for someone who is a great leader and interested in learning about real Danish pastries and cakes.

    RESPONSIBILITIES

    Daily production for all cakes, pastries, and other sweet goods according to our traditional Danish recipes

    Management of a team of 5-10 people and potentially more in the future

    Management of all ordering and acceptance of daily deliveries and ability to keep things within the set cost margins with suppliers

    Handles daily scheduling, hours, and management of payroll

    Responsible for interviewing, hiring, training, and reviewing of BOH staff

    Work together with innovation team for R&D, testing, launching, and producing new SKU’s

    Management of organization of production area; including organization and cleanliness of dried storage, walk-ins, and dairy fridge

    Daily quality checks of products

    Monitor inventory of ingredients for production

    Properly label and store ingredients

    Check equipment to ensure that it meets health and safety regulations

    Maintain a clean and orderly station and adhere to health and safety standards

    Attend certain outside events and programs with possible travel

    QUALIFICATIONS & REQUIREMENTS

    Minimum 5 years’ experience in a high-volume restaurant or production with a focus on pastry, with at least 3 years of having managerial responsibilities

    A genuine passion and knowledge for food and pastries

    A High School diploma or GED certificate is a plus

    Completion of a Culinary School program or apprenticeship preferred

    Prior experience with laminated dough, cakes, chocolate, and sugar work

    Experience with service and expediting

    Knowledge of how to work with a dough sheeter and depositor a plus

    Dependable and hard-working

    Sociable and friendly to staff. We believe personality is your biggest asset.

    Must be meticulously clean and aware of all food safety standards (NYC Food Handler's License a plus).

    Must be available to work on different shifts, weekends, and holidays.

    Thoroughly follow company procedures according to health and safety standards

    Adhere to all food safety regulations and procedures
