Position Overview
Aiona is seeking an experienced and passionate PM Grill Cook to join our opening back-of-house team. This position is ideal for someone who thrives in a fast-paced kitchen environment and has hands-on experience working with live fire, wood-fired grills, open flame cooking, or hearth-style kitchens.
The PM Grill Cook will work closely with the Sous Chef and Executive Chef to execute dishes with precision, consistency, and urgency while maintaining the standards and energy of our live-fire kitchen.
Key Responsibilities
Prepare and execute grilled and wood-fired menu items according to Aiona’s recipes and standards
Manage live-fire stations including temperature control, fire maintenance, and proper cooking techniques
Ensure proper timing, communication, and plate execution during service
Maintain organized mise en place and prep for grill station and surrounding areas
Monitor product quality, consistency, and presentation standards
Communicate effectively with chefs and FOH regarding ticket times, modifications, and special requests
Maintain clean, organized, and safe workstations throughout service
Follow all food safety, sanitation, and workplace safety standards
Assist with opening, side work, prep, and closing duties as assigned
Kitchen Standards & Teamwork
Uphold Aiona’s culinary standards and attention to detail
Work collaboratively with BOH and FOH teams to ensure seamless service
Stay composed, professional, and efficient during high-volume dinner service
Participate in tastings, pre-shift meetings, and ongoing culinary training
Contribute positively to a team-focused and respectful kitchen culture
Qualifications
2+ years of grill, wood-fired, or live-fire cooking experience preferred
Experience working in high-volume or chef-driven kitchens is a plus
Strong understanding of meat, seafood, and vegetable cookery over open flame
Ability to multitask and maintain organization under pressure
Strong work ethic, sense of urgency, and attention to detail
Ability to stand for extended periods and lift up to 50 lbs
Availability for evening, weekend, and holiday shifts
