Position Overview
Aiona is seeking an experienced, motivated PM Sous Chef to join our opening culinary leadership team. This role supports the Executive Chef and Chef de Cuisine in overseeing evening kitchen operations while maintaining the highest standards of food quality, consistency, and execution.
The PM Sous Chef will play a key role in leading service, mentoring cooks, and helping build systems and culture in a high-performance, live-fire kitchen.
Key Responsibilities
Lead and supervise PM kitchen operations during dinner service
Ensure consistent execution of menu items to Aiona’s standards
Manage and support line cooks during service, providing direction and feedback
Coordinate timing, pacing, and communication between stations
Assist with menu execution, recipe adherence, and plating standards
Step into any station as needed to support service flow
Maintain a clean, organized, and efficient kitchen environment
Assist with prep, production, and service as needed
Culinary Leadership & Operations
Support training, coaching, and development of kitchen staff
Assist with scheduling, labor management, and shift coverage
Help monitor food quality, portion control, and waste reduction
Ensure compliance with food safety, sanitation, and workplace safety standards
Participate in pre-service meetings, tastings, and post-service evaluations
Collaboration & Culture
Work closely with FOH leadership to support smooth service execution
Uphold Aiona’s culinary vision, culture, and professional standards
Lead by example with calm, focused, and respectful communication
Contribute to a positive, disciplined, and team-oriented kitchen culture
Qualifications
3+ years of experience in a professional kitchen, including leadership or sous chef experience
Strong understanding of line cooking, service execution, and kitchen organization
Experience with live-fire, grill, or wood-fired cooking preferred
Ability to lead under pressure in a fast-paced, service-driven environment
Excellent communication and leadership skills
Availability for PM, evening, weekend, and holiday shifts
