Job Summary
Pastry Cooks support CALA’s dessert and brunch programs through precise, consistent production of all pastry items. This role is responsible for preparing baked goods, plated desserts, brunch pastries, and specialty items while maintaining a clean, organized workspace and following recipes with exact accuracy.
Key Responsibilities
Execute daily pastry prep list including doughs, batters, sauces, fillings, toppings, and garnishes.
Prepare and finish CALA’s desserts and baked goods according to recipes, plating guides, and restaurant standards.
Assist with brunch pastry production (e.g., muffins, croissants, coffee cakes, laminated items depending on menu).
Maintain excellent organization in the pastry station, reach-in coolers, dry storage, and equipment areas.
Operate pastry equipment safely and correctly (mixers, ovens, proofers, immersion blenders, scales, etc.).
Ensure all items are labeled, dated, stored properly, and rotated according to food safety and FIFO standards.
Follow all sanitation, temperature control, and allergen protocols.
Communicate low product levels, quality concerns, or recipe inconsistencies to the Pastry Chef promptly.
Assist the BOH team during service with plating pastries, restocking, and fulfilling dessert tickets.
Participate in daily and weekly deep-cleaning tasks assigned to pastry and shared kitchen spaces.
Skills & Qualifications
2+ year of experience in a professional pastry or baking environment.
Strong understanding of pastry fundamentals: scaling, proofing, mixing methods, tempering chocolate, basic decoration.
Ability to read and follow recipes with exact accuracy.
Must have (or obtain) a current Arizona Food Handlers Card.
Able to lift up to 50 lbs, stand for long periods, and work in a high-paced kitchen environment.
