POSITION PURPOSE
Supervise the overall kitchen sanitation process and procedures, including, but not limited to, quality and consistent production of all china, glassware, and silverware operations. Oversee the overall dishwashing room operation, to adhere to state and federal sanitation guidelines.
ESSENTIAL FUNCTIONS
Coordinate and direct all work assignments, hands on in the dish department to ensure that organization, sanitation and cost of operation is consistent with the overall food and beverage goals and objectives. Ensure ware washers are consistent in total dish washing operations by meeting departmental standards. Coordinate with banquet runners to ensure that all set up sheets are completed and delivered in a timely manner. Ensure that dish wear department has all the necessary tools to complete work assignments. Monitor and coordinate the day to day set ups of china, glassware, and silverware items to all banquet functions and outlets and ensure they are properly completed and delivered. Responsible for chemical supply control and inventory and for china, glassware, and silverware items; adhere to breakage and loss awareness control. Responsible for all storage of china, glassware, and silverware to their designated storeroom. Ensure safety is being met as a departmental goal.
QUALIFICATION STANDARDS
Education
High school or equivalent education required.
Experience
Kitchen or food & beverage related experience preferred.
