    JOB SUMMARY

     This position exists to participate in all activities, including food preparation, plate presentation, ware washing, and cleanliness and sanitation procedures. The Sous Chef will also lead line cooks, prep staff and dishwashers to ensure shift is successful in a manner consistent with the Mission and Values of The Dollywood Company.

     

     

     

    SUMMARY OF MAJOR DUTIES AND RESPONSIBILITIES 

     

    • Checks with the Park Chefs for daily objectives.
    • Directs all HOH staff to ensure a successful shift.
    • Ascertains all specials and methods of preparation and presentation.
    • Ensures all dishes are prepared and presented in accordance with standard recipes and presentations established by the Park Chef.
    • Cleans and organizes workstation.
    • Maintains a clean and sanitary culinary environment in compliance with all local and federal health codes.
    • Performs banquet and kitchen line functions as directed by the Park Chef, including sautéing, production, plating and grilling.
    • Ensures assigned workstation has proper level of par stocks and supplies according to daily menus and banquets.
    • Checks product/supply levels and adjusts to daily needs and communicates any shortages.
    • Leads and participates in daily line ups.
    • Assists with staff instruction and follows through training throughout service.
    • Assumes duties of Park Chef in absence or as directed.

    • Skilled with cooking and baking various types of food/dishes.

    Required Experience

     

    • Must have a minimum of 3 years cooking experience in similar operation.
    • Must be able to obtain Food handler certification.
    • Must be at least 18 years old.
    • Basic computer knowledge and usage preferred.
    • Must pass a pre-employment background check.
