    SUMMARY:

    Under general direction of the Chief Operating Officer (C.O.O.) and the Executive Team, the Director of Food & Beverage supervises and manages all aspects of Food & Beverage, Ridley Tree-House Restaurant, the Wave, the Buzz, mobile beverage carts, temporary concessions stands, and internal food and beverage catering.

    ESSENTIAL DUTIES include the following:

    Daily Operations

    Manages and supervises Food and Beverage staff in all capacities.

    Performs all functions of Food and Beverage operations such as cook, daily prep, end of day clean-up, or performs work of subordinates, as needed.

    Places necessary orders at best market value for food and paper products that meets business demands.

    Evaluates and manages menu for all Food Services locations.

    Maximizes restaurant profits by monitoring daily efficiencies.

    Organizes and delivers catering requests from events, and department needs.

    Manages department budget to meet fiscal goals.

    Maintains a safe and properly maintained facility.

    Manages equipment purchases and submits capital requests.

    Develops efficiencies and strategic plans to enhance the staff and guest experiences.

    Manages Point of Sale hardware and software.

    Provides training and develops or modifies standard operating procedures.

    Ensures employees fully understand their contribution to the success of the guest experience as well as our mission.

    Encourages a restaurant environment that is “employee friendly,” fun, clean and safe; takes accountability for motivating and inspiring employees to achieve high performance; treats all employees with respect and dignity; and regularly recognizes and rewards employees

    Monitors budgets and payroll records, and reviews financial transactions to ensure that expenditures are authorized and budgeted.

    Financial responsibilities; Daily labor budgets and reports, sales, invoice approval, weekly sales, inventory, labor, COGS reporting. - Monthly P&L review

    Schedule and receive food and beverage deliveries, checking delivery contents to verify product quality and quantity.

    Staff Development:

    Interviews and hires Food & Beverage staff and supervisors.

    Provides staff coaching and feedback on a regular basis, have 1:1 weekly meetings with each supervisor and aim for a weekly team meeting.

    Provides staff training on use of equipment, safety, goals, and standard operating procedures and policies.

    Oversees all cash handling procedures in Food & Beverage operations. Controls cash and other receipts by adhering to cash handling and reconciliation procedures in accordance with restaurant policies and procedures.

    Develops and implements individual development plans and ensures their application with regular follow-ups.

    Shares critical information, best practices, and procedures on a consistent basis with staff through meetings that further departmental goals and productivity.

    Responds to staff questions and concerns.

    Performs evaluations of Food & Beverage staff, and provides development opportunities.

    Disciplines and/or Terminates employees within defined practices and policies, in collaboration with Director of Human Resources.

    Holds staff accountable and enforces all Core Values.

    Operation and Business:

    Schedules staff in a manner that prioritizes operational needs.

    Encourages, supports and exemplifies the highest ethical standards to ensure the continued development of the institution and the profession.

    Ensures that all regulatory standards are met, such as adherence to Department of Health standards and applicable labor laws. Monitors and maintains compliance with health and fire regulations regarding food preparation and serving and building maintenance.

    Ensures consistent productive operating practices by identifying areas for potential revenue generation, reduction of costs and more efficient procedures.

    Establishes and monitors compliance with purchasing policies and procedures.

    Negotiates and monitors most vendor contracts.

    Monitors F&B activities and ensures quality levels are met.

    Maintains food and equipment inventories, and keeps inventory records current.

    Designs and implements new systems and/or improves existing systems within F&B to take advantage of new technology and new operating efficiencies, in collaboration with COO.

    Organization

    Interacts with all department heads as a member of the Zoo’s management team.

    Adheres to the Zoo’s policies and procedures as outlined in the Employee Policy Manual.

    Applies and Exemplifies “green” (sustainable) practices whenever possible.

    Familiarity with Zoo’s mission and core values.

    Attends monthly all-employee meetings.

    Attends bi-monthly management meetings.

    Guest Relations

    Greets every guest with a smile.

    Thanks guests for supporting/visiting the Zoo.

    Responds to all guest inquiries, complaints, and comments according to Zoo guest relations procedures.

    SECONDARY DUTIES:

    Answers phone calls, voice mails, and e-mails professionally and promptly.

    Ensures the Zoo’s presentation standards for cleanliness and maintenance are met by keeping work areas clean, picking-up trash and micro-trash, reporting unsafe or unsightly conditions.

    Associates with guests to assist and share information.

    Maintains a clean neat appearance, adheres to the Zoo’s uniform dress code and enforces dress code throughout F&B.

    Takes responsibility to stay informed about happenings at the Zoo, such as reading employee communications and attending meetings.

    Reflects the qualities outlined in the Guest Relations Statement, the Employee Pledge and our core values.

    POSITION CRITERIA:

    Education and Experience:

    Minimum 4 - 5 years experience in Food and Beverage operation, hotel or restaurant

    Minimum of 3 years of supervisory experience

    Certification or Degree in Food Service Management, or BA in Hospitality Management a plus

    License, Certification, or Preferred Qualifications:

    Must be at least 18 years old

    Must have a valid California driver’s license with good driving record.

    Managers Food Handlers certification, ServeSafe

    Alcohol Server certification through Alcohol and Beverage Control

    Ability to converse fluently in English and Spanish is desirable.

    Physical Demands & Work Environment:

    Requires the ability to access all areas of the facility.

    Ability to stand and walk approximately 75-80% of shift.

    Ability to move freely throughout the restaurant, café, Buzz areas and to operate restaurant equipment

    Ability to negotiate the zoo work environment including behind-the-scenes, lawns, gravel, and hilltop.

    Ability to perform physical activities that require considerable use of arms and legs and moving the whole body, such as climbing, lifting, balancing, walking, stooping, and handling of materials.

    Must be able to lift and carry cases in excess of 25 pounds waist high, and up to 65 pounds with applicable equipment (dolly or other).

    Must be able to participate in all operational practices: includes ability to climb stairs, manipulate tools, stand/walk for up to two continuous hours.

    Ability to exert a negligible amount of force frequently or constantly push, pull or otherwise move objects.

    Exposure to hot surfaces and sharp objects.

    Ability to drive a motor vehicle
