    The Dining Services Director directs all activities of the Dining Services Department and Dining Room. The position is responsible for quality of meals served, quality of service during meal times. This position also is directly responsible for establishing and maintaining all standards of quality, conduct, customer service, and productivity within the Dining Services department. This position also maintains appropriate levels of staffing and food / supplies inventory and works within the established budget, safety and sanitation guidelines.

    Essential Duties and Responsibilities

    General management responsibilities include, but are not limited to overseeing and accepting the final accountability for the following either directly or through designated staff:

    *       Innovate, plan, promote, and supervise a Dining Services program that meets or exceeds the minimum standards of quality, productivity, and customer service of the members of the Community. Ensure the program accommodates the broad spectrum of tastes, interests and personal therapeutic requirements of the resident population. Continuously monitor and appropriately address, the resident Community for shifts in needs and preferences, likes and dislikes, and attitudes using personal interviews, approved surveys, resident committees, suggestion boxes, etc.

    *       Follow the company’s Menu Program or approved substitution menu that meets nutritional requirements; Conform to policy and procedures for all special diets offered.

    *       Responsible for costs associated with food purchases, equipment purchases and supply purchases as outlined within the budgeted requirements.

    *       Comply with Sanitation and Dietary Guidelines; Comply with any and all state, local or federal rules, regulations and licensing requirements related to health, safety (OSHA), and general operation of the Dining Services department.

    *       Maintain a clean kitchen; this includes all equipment, walls, ceilings, vents, dry-storage, cold storage, cooking areas, preparation surfaces and dish storage areas.

    *       Establish, document, direct and assist in general kitchen and dining room sanitation procedures; includes preparing schedules for Dining Services staff and posting in their work areas. Ensure and provide for the proper cleaning and preventive maintenance of departmental equipment.

    *       Ensure that all foods are prepared to satisfaction of residents and in accordance with safe food handling practices.  Maintains food temperatures during storage, production and serving according to required food safety standards.  Uses equipment that meets all health department standards.  All food items are stored appropriately and dated properly.

    Required Experience:

    *       Knowledge and understanding of cooking skills and ability to follow instructions/recipes consistently.

    *       A minimum of four (4) years prior Supervisory experience in Dining Services.

    *       High school diploma or equivalent.

    *       Must be able to read English proficiently.
